Let’s be honest, it’s great to make meals fully from scratch when you have the time. But with back to school season officially upon us, our days are way busier than they were before (even if you don’t have kids and are not back to school yourself, there’s still fall activities you need to squeeze in!).

Having some easy, semi-homemade meal ideas on hand makes the end of those crazy busy days feel a little more manageable, am I right?

Well, Trader Joe’s to the rescue because they have so many amazing fresh ravioli options that it opens up a world of opportunities.

This roasted brussel sprout & caramelized onion is one of my favorites (I even made my very own pasta bake after it!) and one that I always like to keep on hand.

It’s easy to pair with some veggies, top with another little sprinkle of cheese and viola! Dinner is done.

For this dish I went all in on the roasted brussel sprout/caramelized onion flavor, but you can honestly pair it with so many other veggies. It would be great with mushrooms, asparagus, zucchini, broccoli…the list goes on.

So pick your favorite and you’re on your way to easy dinner heaven!

It’s best when served with a buttery piece of crusty bread (like this cranberry walnut bread!)

roasted brussel sprout & caramelized onion ravioli

Description

cheesy roasted brussel sprout & caramelized onion ravioli embraces its roots in this dish when combined with roasted fresh brussel sprouts & caramelized onions for an easy weeknight meal.


Ingredients

Scale
  • 1 package Trader Joe’s brussels sprouts & caramelized onion ravioli.
  • 1 lb bag fresh brussel sprouts, washed & halved 
  • 1/2 medium yellow onion, sliced
  • Olive oil or butter
  • Salt & pepper
  • Freshly shredded parmesan cheese for garnish

Instructions

  1. Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.  
  2. Toss brussel sprouts with salt, pepper and a hefty drizzle of olive oil then place on prepared baking sheet and roast in the oven oven for 20-25 minutes or until lightly browned and tender.  
  3. While brussel sprouts roast, cook ravioli according to package instructions.
  4. Once pasta is cooking, place a non-stick sauté pan over medium heat and add another hefty drizzle of olive oil or butter.  Add onions and sauté until they are a nice golden brown color (about 10 minutes).  Once cooked to golden brown, remove from heat & set aside.
  5. Toss cooked ravioli, roasted brussel sprouts and caramelized onions together in a bowl.  Drizzle with olive oil or toss with butter, salt & pepper and freshly shaved parmesan cheese.
