..of a jar of oats!

Vermont Morning Oats to be exact.

Remember my Vermont trip last summer?  My sister and I still talk about what a blast it was.  It really was such a significant trip for so many reasons.

If you’ve forgotten, or don’t know about it – you can read all about it here.

Anyway, this morning I broke out the good stuff for a nice hearty breakfast.

There’s such a great variety of textures in this oatmeal.  I love it.

And boy oh boy is it ever filling.

I feel like I barely have room for coffee after finishing this!

Into the mix I added 3/4 diced apple, a dash or two of cinnamon, 1 tbsp chia seeds and about 1 cup or so of water (just enough so that everything was more or less submerged).

Cooked on HIGH for about 3 minutes in the microwave, topped with Almond Butter and viola!

I’m now nursing my coffee as I try to digest.

    Looks like my bowl of oatmeal yesterday. Except I keep forgetting to put chia seeds in my oats now that I have them!
