I took some much-needed time to just unplug yesterday.

After spending 2 straight days in front of a computer with GRE stuff, I just needed to take a day to do something else.

And boy did it do the trick!

I woke up today feeling WORLDS better.

And that called for a celebration…in the form of a waffle stack!

I took 2 Van’s Multigrain waffles and toasted them up.

Then I spread a thin layer of Trader Joe’s Sunflower Seed Butter on top of each one (I find I like this method better than the small spoonful in the middle on top because you get a little in each bite this way)

That was followed by a layer of 0% plain Chobani (mixed with 1 tbsp. chia seeds)

Finished off with a layer of sliced strawberries.

And now it’s back to studying!

    I love having a hot waffle with something cool on top like cool whip or greek yogurt. I mean I am all for the cold whipped cream on anything so…
