The Nighttime Chef

I let the nighttime do my cooking for me last night so that when I woke up – breakfast was ready!

I really overdid the overnight oats this past winter when my schedule was so crazy because it was just so easy.

Since then I’ve had them maybe 2 or 3 times – I just haven’t had a taste for them.

But yesterday morning, as I was eating my hot oats I found myself wishing they were overnight…for the first time in a LONG time.

So you bet your bottom dollar that I knew immediately what I would be having for breakfast today.

I utilized a lot of my newly stocked fruit to create this one.

Into the mix last night I put:

  • 1/3 cup Vermont Morning oatmeal blend
  • 6 oz. container of plain Chobani
  • 1/3 cup soymilk
  • 1 diced peach
  • Small spoonful of melted sunflower seed butter
  • 1 tbsp. chia seeds

Stir well, cover and pop in the fridge before bed.

In the morning I took it out and topped it with:

  • Cville Cluster Granola
  • Strawberries
  • A small scoop of sunflower seed butter

And topped it off with a cherry πŸ™‚

On the side was the standard coffee + soymilk:

A delicious start to a Friday for sure.

    I pre-made my breakfast too, only I made my peach cobble chia pudding. I think overnight oats are in my future next week though. Love a cool summer breakfast.

    Your breakfasts always look so amazing!!! I have been loving the overnight oats this past week – especially since temps have been reaching almost 100 everyday!!! Also, sunflower seed butter is addicting – I bought it after reading about it on your blog! I cannot get enough of it, I absolutely love it!!

      Oh I’m so glad!! I absolutely LOVE it so I’m always happy when I can introduce others to it and they enjoy it! It most definitely is addicting though – I go through more jars than I should! πŸ™‚

    You really have the cutest dishware!!! I am slightly obsessed with cool bowls/plates/etc. but you have some of my favs πŸ™‚ Bfast looks awesome as usual!

      Haha I’m the EXACT same way. Despite the number of dishes and bowls I have, I can’t help but want more when I see one I love – glad you like them! πŸ™‚ And thank you – it most definitely was awesome!

    Overnight oats are my favorite summer breakfasts! Your bowl looks fantastic. I’ve never tried mixing sunflower seed butter directly into the oat mixture though – I always just drizzle it on top. Did the flavor come through?

      I’ve actually never done it either – this was my first time! The flavor comes through slightly but it’s definitely hard to pick out once all the rest of the stuff is added in!

    Totally random but your orange mug reminds me of one of my favorite old orange mugs. It was nothing special but my old roommate hid it before I moved out and then when I stopped by one day after moving out, the guy who took my room was drinking from it. I didn’t want to start an argument so I let it be. But I MISS that mug. πŸ™

      Ah! That’s so crazy! I think I got this one at CVS during the Halloween/Thanksgiving season so maybe they’ll have it again!
