triple chocolate everything cookies

these cookies combine not one, not two but THREE kinds of chocolate for the ultimate chocolate experience!

Earth Fare sells these packs of fresh cookie dough that are just perfect.

They come in packs of 4 which is absolutely perfect for me because when I crave cookies, one or two usually does the trick and then I want nothing more to do with them.

So imagine my delight when I came across these little packs!

Which quickly turned into delight times 10 when I found the “Vegan Everything Cookie” dough.

Those suckers were GOOD.  And of course they got my wheels turning.

As I was thinking about my favorite vegan cookie bases, the PPK’s chocolate peanut butter pillows popped into my mind and I knew it would be a winner.

From there I just walked around my kitchen gathering different bits of things to throw into the dough.

Ingredients

That’s probably the best part of these cookies is that you can really add whatever you like!

Pretzels.

Raisins.

Peanut butter chips.

Dried cranberries.

Walnuts.

There are SO many things that go well with the chocolate base.

I went and added milk chocolate chips which de-veganized these cookies, but you can easily omit them or add dairy-free to keep it’s vegan status.

{triple chocolate everything cookies}

makes: 2 dozen (depending on the size of the cookie scoop you use)

ingredients:

  • 1/2 cup canola oil
  • 1 cup sugar
  • 1/4 cup pure maple syrup
  • 3 tablespoons non-dairy milk (I used soy milk)
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/3 cup unsweetened dutch processed cocoa powder
  • 2 tablespoons black unsweetened cocoa or more dutch processed unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup of mini chocolate chips
  • 1/3 cup white chocolate chips
  • 1/3 cup peanuts (roughly chopped)
  • 1/3 cup coconut shreds
  • 1/3 cup raisins
directions:
 
  1. Preheat oven to 350°F. Line baking sheet with parchment paper.
  2. In a large mixing bowl combine oil, sugar, maple syrup, soy milk and vanilla extract and mix until smooth. Sift in flour, cocoa powder, black cocoa if using, baking soda and salt. Mix to form a moist dough.
  3. Combine add-ins of choice with moist dough and mix well.
  4. Using a cookie scoop, scoop out dough onto prepared baking sheet.
  5. Place dough on lined baking sheets about 2 inches apart and bake for 10 minutes. Remove sheet from oven and let cookies for 5 minutes before moving to a wire rack to complete cooling.

    I usually don’t buy or make vegan baked goods, but these look too good to pass up! Plus, no weird “health-food” ingredients!

tweaked my slow cooker turkey, bean & veggie chili
tweaked my slow cooker turkey, bean & veggie chili this past week to make it meatless and it was 🙌🏼⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ here’s how I did it:⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 1/2 red onion, finely chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 1 cup diced bell peppers (I used a mixture)⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 3 cloves garlic, minced⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 2 tablespoons tomato paste⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 1 (28-oz.) can diced tomatoes⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 1 15-oz. can black beans, rinsed and drained⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 1 15-oz. can kidney beans, rinsed and drained⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 1 1/2 cups veggie broth⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 3 teaspoons chili powder (+/- as desired)⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 1 teaspoon ground cumin⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 1 teaspoon dried oregano⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 1-2 sweet potatoes, peeled & cut into 2 inch cubes⠀⠀⠀⠀⠀⠀⠀⠀⠀ - Salt & pepper, to taste⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 2-4 tbsp. olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 2 cups cooked quinoa⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ place everything but the quinoa into a slow cooker & place on HIGH for 4 hours.
