waffles won

morning!

i slept so well last night – it was such a joy to sleep past 6:30 for the first time in a while!

i woke up not being able to decide between a waffle stack and oatmeal…but the waffles won out.

don’t they always?

i topped two toasted kashi 7-grain waffles with sunflower seed butter, a mix of 0% plain and the very last of my vanilla chobani then defrosted some frozen peaches and strawberry slices to add to each of the layers.

waffle stacks just aren’t the same without chia seeds mixed into the yogurt…they just make it so thick!  plus the extra boost of fiber and omega-3’s they provide isn’t so bad either 

On the side, as always, was a festive mug of coffee + soymilk

i have to head into campus for a bit today to get some things done (and use the gym!) but i’m not sure when that will be.  i guess i’ll see how the rest of the morning goes and take things from there.

    When you mix yogurt and chia for a waffle stack how much of each do you use? And is it greek yogurt or traditional?

      I use about 1 tbsp. of chia seeds and for the yogurt I don’t usually measure. It varies probably from 1/4 cup – 1/2 cup though. It’s greek yogurt – I find it tends to work better because it’s thicker than regular yogurt. 🙂

    I’ve been missing toaster waffles so I got a box of Van’s earlier this week and cannot stop eating them 😛 I’ve never tried chia seeds in my yogurt, thanks for the tip! And super cute festive dishes!

      Definitely give the chia seeds a try – it makes it so thick! And yay for toaster waffles – THE BEST!
