King Arthur Flour published their Recipe of the Year in January and I’ve been dying to making it ever since because it’s a recipe that’s right up my alley – whole-grain banana bread!
And, as you would expect fromKing Arthur Flour, this bread has been tested, re-tested and tested again to make sure it’s exactly right. And it is.
This bread is everything you would want a banana bread to be – ridiculously moist and full of banana flavor with an added crunch of walnuts.
But on top of all that, it’s also loaded with fiber thanks to the 4-5 bananas it contains (which, at 3 grams of fiber a piece is not insignificant!), whole grain flour and walnuts which also add a dash of heart-healthy fat and protein.
It’s the banana bread that bridges the world of baking and nutrition and I absolutely love it. I’m a HUGE proponent that it’s absolutely possible to have nutrient-packed baked goods and this bread proves exactly that.
It also only requires one bowl, which you guys know I absolutely love. Anything that cuts down on the amount of dishes I need to do makes me a very happy girl.
This bread is simple, delicious and hearty. I dare you not to eat half the loaf by day’s end!

Could I make this gluten free?

Yes! You can! King Arthur actually mentioned in their post that you can utilize their Measure for Measure flour for a 1:1 substitution!
