these easy baked oatmeal cups are great to make over the weekend and have on hand for easy meals all week long!

I made these easy oatmeal cups over the weekend to have on hand for quick breakfasts and snacks and I got so many requests for the recipe after posting them in my stories that I decided to throw them up on the blog!

They’re pretty much as simple as it gets but they’re really delicious (whether you’re eating them hot or cold!).

I love these because you can serve them up as is, with some yogurt and nut butter or with a drizzle of maple syrup.

Not only that but they’re portable so if we’re headed out for a walk around a snack time, I can just grab one for Owen to munch on in the stroller while we go.

You can throw some crushed walnuts in there or swap the apples for pears or bananas, the raisins for chocolate chips, anything really goes with these. You could even fold in some peanut butter directly into the batter!

Mix it up in whatever way works for you – these are pretty hard to mess up!

Description

these easy baked oatmeal cups are great to make over the weekend and have on hand for easy meals all week long!


Ingredients

Scale
  • 2 cups rolled oats
  • 2 tablespoons chia seeds
  • 1 teaspoon baking powder
  • 2 tablespoon packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 large egg
  • 2 teaspoons vanilla
  • 1 1/2 – 2 cups soymilk (or any kind you prefer)
  • 1 medium apple, washed, cored & cubed (you can peel if desired)
  • 1/3 cup raisins
  • 1/3 cup roughly chopped walnuts (optional)

Instructions

  1. Preheat oven to 375 degrees F and spray a 12-cup muffin pan with cooking spray or line with paper liners.
  2. In a large mixing bowl combine oats, chia seeds, baking powder, brown sugar, ground cinnamon and salt.  Whisk to combine and set aside.
  3. In a smaller mixing bowl combine egg, vanilla and milk whisking to combine.
  4. Add wet ingredients to dry ingredients and gently fold to combine.
  5. Gently fold in apples, raisins and walnuts if using.
  6. Carefully scoop batter evenly into 12 muffin cups (it will be pretty liquidy so make sure you’re getting both liquid and oat/apple/raisin mixture in every cup)
  7. Bake for 30-40 minutes or until a knife comes out clean or with a few wet crumbs and sides are lightly browned.
  8. Allow to cool for 5-10 minutes before storing or serving.

Notes

  • You can store these in an airtight container for 4-5 days in the fridge or up to 2 months in the freezer.

    Amazing! Super easy to make and all with ingredients I already had! They are the perfect treat! I used right about 1.5 cups of soymilk and baked closer to the 40 min mark. Will definitely be making these again!

      I didn’t, I just greased the pan, but you definitely can use liners if you want!

    Hmm, I’ve never worked with coconut sugar so I’m actually not sure how it behaves! I’m sorry! If you’ve used it as a sub for brown sugar in other things I would say so. There’s likely not enough sugar in this recipe to impact it and it’s really just for sweetness, so I would imagine it would be fine. If you find it less sweet/more sweet than brown sugar, you can adjust accordingly 🙂
