this easy budget-friendly grain bowl combines all my favorite mediterranean flavors in one quick meal (plus makes a great packed lunch!)

My sister brought home a pre-made Mediterranean salad from Trader Joe’s the other day and I knew immediately upon seeing it that I had to make my own version of it at first.

If you’ve followed along with me for a while then you know I love all things Mediterranean. Growing up as part of big Greek family, these are the flavors I grew up on, so they’re not only delicious, but also nostalgic to me.

And let me tell you, this salad. All kinds of nostalgia right along side tons of flavor!

I love this because it comes together quickly, provides a little bit of everything from carbs to protein, fat and fiber and can also be easily packed up as a lunch option to take to work or school.

You can switch it up with whatever veggies you happen to have on hand. And if you prefer chicken to chickpeas, go ahead and make that swap. Anything really goes (which is another bonus for this dish!), so feel free to make it your own.

If you’re packing it up as a lunch, just omit the dressing and add right before you’re ready to eat. Otherwise it should hold up well! It would also make a super easy dinner on nights when you just don’t feel like cooking. No matter how you serve it up, I promise it will hit the spot!

Description

this easy budget-friendly grain bowl combines all my favorite mediterranean flavors in one quick meal (plus makes a great packed lunch!)


Ingredients

Scale
  • 2 large handfuls baby spinach
  • 1/2 – 2/3 cup cooked whole wheat orzo pasta
  • 1/3 cup canned chickpeas, drained & rinsed
  • 1/4 cup diced cucumbers
  • 2 tablespoons diced red onions
  • 2 tablespoons diced sun-dried tomatoes
  • 2–4 tablespoons crumbled feta cheese
  • Salt & pepper, to taste
  • Greek vinaigrette, olive oil & balsamic glaze or other favorite dressing for topping

Instructions

  1. Assemble all ingredients together in a bowl, toss to combine and enjoy!

Notes

  • If packing for lunch, pack the dressing separately and add just before you’re ready to eat.
