As predicted it’s been yet another crazy day for me! I’ve only got a minute so I’ll dive right into my yummy eats this afternoon!
I threw together a lunch last minute this morning but it turned out awesome! PLUS, I saved myself $15 and didn’t have to deal with moldy yogurt! 
I started with a big old salad (are you guys sick of my big salads yet?
) that I paired with two pretty plums and a vanilla Chobani + cherry pie Larabar -

I just love big salads. They’re so darn easy to throw together and they keep my full for hours! In this one I threw 2 good handfuls of spring mix, 2 tsps. honey roasted almond slivers, half a gala apple, and a to-go hummus container
Look at all that color! So pretty to look at. 
Continuing the radiance were my purple plums -

And an all-shades-of-purple cherry pie Larabar -



I’ve never had the cherry pie flavor before and sadly I think a lot of the flavor got lost when I mixed it with the yogurt
But the texture was still great so not all was lost!
This lunch was perfectly filling and just what I need to carry me through what is shaping up to be a pretty zany afternoon.
I think I’m definitely going to need a yoga session later tonight!
I LOVED the favorite yogurts discussion this morning..it seems like we all pretty much agree that Greek yogurt is it! I’m so curious to try some of the brands you guys suggested…it looks like I’m going to need to find me a Trader Joe’s ASAP!

Your favorite workout answers gave me SUCH motivation! I’ve never tried hot yoga, but I’m definitely curious to do it! It seems people either LOVE it or HATE it so I wonder which type I’d be…
Anyway – despite my HUUUUGE coffee this morning, I found myself really dragging around 1pm and fell prey to the Starbucks in our building 
I devoured this guy! It was totally insane, but I guess I needed it. Just hope I can actually fall asleep tonight! 
After work I headed to Best Buy and Staples to begin my camera hunt but I didn’t have much luck. I found one that I liked but of course they were out of stock. It’s probably better I didn’t buy anything today…I need to do a bit more researching before I commit 
When I got home I contemplated going for a run but decided it was better to eat first since I had a somewhat early lunch.
Dinner ended up being a mish-mosh of wonderful! 
I threw together a big salad topped with a veggie burger, almond slivers and half a gala apple -
Paired with a roly poly plum -
And some more o’ that delicious roasted corn -

Filling and delicious, just what I needed!
After dinner I was craving a little something sweet so I broke out the last of my rainier cherries -
I plowed straight through this stash. They call these “nature’s candy” and my-oh-my, they seriously couldn’t be more on point with that! I’m so sad they’re gone!!
I’m one exhausted girl so I’ll definitely be calling it an early night (guess I’ll be able to sleep after all!) but hopefully I can get a small run in first! 
Off to digest/relax with Two and a Half Men for now though…Night everyone!

Afternoon Cait’s Platers
I hope your mornings went well and you’re coasting through this Thursday afternoon right on into Friday!
I’m off to get my root canal soon (
), so my afternoon could be better, but hey – at least that hopefully means no more pain! How’s that for a glass-half-full attitude?!
For lunch today I decided to go with what I knew worked seeing as it may just be my last chewable meal for a while…
I did a variation on the same salad that I threw together last night -


I kept the mixed greens, strawberries, hard-boiled egg and almond slivers the same, but substituted the veggie burger with the last two slabs of my plain and bbq baked tofu as my protein source.
On the side I added some Kashi love…

And a frozen Mixed Berry Whole Soy&Co yogurt with some Go Lean Crunch Honey Almond Flax mix-in:

Yum.

I’m off to face my fate! If dinner is nothing but a smoothie, I apologize!

Holy Moly, what an afternoon! I have so much to blog about I don’t even know where to start!
First things first I suppose…
This afternoon I snacked on a Market Pantry Oats & Chocolate Fiber One bar -

I got out right at 5pm tonight which was nice after a very busy and productive day and upon arriving at my doorstep, the most amazing thing was there waiting for me…


I am BEYOND excited!! It’s everything I was hoping for and more so far – I am completely in love. 
And the good news for you all is that now my regularly scheduled blogging can resume – hooray!
And with that – I present you with tonight’s dinner at a non-horrifyingly late hour!
On the train home from work I began mentally scanning my fridge and concocted this magnificent salad all before stepping foot in the door!

It was absolutely divine. The mix was:
Mixed greens
Strawberries
Hard boiled egg
Amy’s Veggie Burger
Honey roasted almonds

On the side I broiled the last of my leftover whole wheat pitas from the Pita Grill and drizzled a little EVOO+salt over them


This salad seriously hit the spot like 8 times over. I didn’t even need dressing on it which is definitely the true test of a good salad 
My happy ending to the day was this strawberry-chocolate-yogurty amalgamation:

I topped a strawberry Oikos with one of my Silken Strawberry cupcakes then added about 1/8th of a shaved Godiva dark chocolate ganache bar
Off to do a couple more things then head to bed for the third early night in a row!

It’s been a busy morning and I was quite happy to break for lunch – which I have to admit, I’ve been excited to eat since breakfast!
I packed a bunch of delicious things today..

The star of the show was most defintiely my baked tofu sandwich that I covered in a slice of pepperjack cheese then toasted to perfection:

Topped with a little romaine and a smear of Annie’s Natural mustard, it went wonderfully with my leftover spinach…

Love those honey roasted almond slivers…they make the dish every time!
To round it all out, I had circular tower consisting of a vanilla chobani topped with some Kashi Go Lean Honey Almond Flax (my favorite) -

The excitement to eat this lunch was NOT unwarranted! It was absolutely fantastic!
I based my baked tofu recipe off Gliding Calm’s. I started with a block of Nasoya extra firm tofu that I cut up into 3rds, then again into halves. You can vary this however you want depending on how thick/thin you like your tofu…obviously the thinner you go, the more crunchy it will be. I then added a little olive oil and salt – baked at 425* for 45 minutes. SO good. If you’re not a tofu fan, definitely try it this way, I promise you won’t regret it.

My very own Cait’s Plate MojaMix!! I am SO excited! I’ve been seeing this pop up all over the blogosphere and just couldn’t resist creating a mix of my own. I’m going to save the exact ingredient list as a surprise for when it debuts

Oye, I’m so sorry for the chaotic posting guys. Thanks for bearing with me…my new computer should be coming any day now and we’ll be right back on schedule 
This afternoon I had a Peanut Butter Cookie Luna Bar to hold me over until dinner.

Love this flavor. I think I’d rather eat this entire guy for 180 calories, than one tiny peanut butter cookie for the same (if not more!) amount of calories, any day. But I’m a volume eater to the fullest, so to each (hah – I just typed “eat”) his own! 
I have to say – my lunch + snack really held me over well today. Almost too well! When I got home at around 6:30 I wasn’t even remotely hungry for dinner…so rather than waste time watching TV and bumming around, I decided to go work up an appetite on a run. I only did about 20 minutes, but I followed it up with a nice 35 minute walk by the water. It was perfect weather and I was just happy to be outside.
It did the trick because when I got home I was definitely ready to eat. I whipped up a quick meal of an Amy’s Veggie Burger with lettuce, onion and mustard on an Ezekiel bun…

then made some spinach on the side with honey roasted almond slivers.

Holy Yum! The almond slivers in the spinach were absolutely amazing! I was in heaven for the second time today! The burger was tasty too – I think I prefer the Amy’s California Veggie Burger better…but this was still really good.


This meal was perfectly filling…actually almost too filling…but definitely hit the spot after my run.

HOOOOLLLYYYY yum! I was in serious heaven at lunch today!

Using Kath’s recipe, I made Baked BBQ tofu last night and decided to throw it over a big ol’ salad for today’s lunch.

The mix was the absolute perfect blend of flavors. I went with:
Mixed greens
Chopped gala apple
Honey Roasted almond slivers
2 slices of Baked BBQ tofu
Golden raisins
Half a whole wheat pita from Pita Grill

This was the lightest, most refreshing salad ever and I would suggest trying ASAP! I think it was definitely the chopped apple that made it for me
