Eggs got a bad reputation for a while but they can actually be a great source of protein in the diet, and not just the whites! The yolks are rich sources of choline, lutein and zeaxanthin.
Plus eggs can be an affordable and versatile option to add to the diet. For those of you that follow me on Instagram, you know that they’re a staple in my diet, so I figured I would share some of my favorite ways to include them!

I’ve been trying to get myself to like eggs (I think maybe it’s a texture thing?) because they’re such a great source of protein and as a vegetarian I’m always looking for things like that! I think I need to try some of these, like the feta bake!
