5 easy, packable lunches you can pull together just a few things prepped over the weekend!

As promised, I’ve pulled together 5 easy, packable lunches that you can pull together with the few things that I prepped this weekend!

Note that you can pair all of these with a piece of fruit (or other side!) to really round out the meal!

MEDITERRANEAN GRAIN SALAD

5 meal prep packable lunches // cait's plate

What’s In It?

  • 2 large handfuls mixed greens
  • 1/2 cup cooked farro
  • 1/3 cup chickpeas that have been drained & rinsed
  • 1/4 cup diced cucumber
  • 1/4 cup cherry tomatoes
  • 2 tablespoons diced red onions
  • 2 tablespoons dried cranberries
  • 2-3 tablespoons crumbled feta cheese
  • Toppings: Freshly ground black pepper, olive oil & balsamic glaze

Just layer everything into the bowl, pack the dressing on the side and you’re good to go!

CHICKEN FINGERS & VEGGIES

What’s In It?

  • 2 parmesan chicken tenders (recipe coming soon! or you can go with store-bought – I love Applegate Farms chicken tenders)
  • 1/2 cup roasted broccoli (recipe here)
  • 1/2 cup roasted sweet potatoes (recipe linked in this post)

VEGGIE-FILLED GRAIN BOWL

What’s In It?

  • 1/2 cup cooked farro
  • 1/3 cup chickpeas that have been drained & rinsed
  • 1/2 cup roasted broccoli (recipe here)
  • 1/2 cup roasted sweet potatoes (recipe linked in this post)
  • 1/4 avocado
  • 2 tablespoons dried cranberries
  • 2-3 tablespoons crumbled feta cheese
  • Toppings: Freshly ground black pepper, olive oil & balsamic glaze

CHICKEN FINGER BENTO BOX

What’s In It?

KIDS MEAL

  • 1/3 cup hidden veggie whole wheat mac & cheese (recipe here except I used whole wheat penne)
  • 1/2 cup roasted broccoli (recipe here)

    I’m curious about the containers in the pictures! They look really nice and I’m in need of more glass storage containers. What kind are these?
