Sweet potatoes are one of my absolute favorite vegetables and while I’m happy to eat them year round, they’re especially tasty this time of year.
Not only are they delicious, but they’re also a nutritional powerhouse. A 1 cup serving of (baked, not fried!) sweet potato provides more than 100% of your daily need for vitamin A, half your daily requirement for manganese and vitamin C as well as vitamins and minerals such as vitamin B6, copper, biotin, pantothenic acid and potassium. Not to mention they also offer a good amount of fiber and fit very well into a budget.
So with that said, I’m sharing a few of my favorite sweet-potato dishes (another great perk – the many, many different ways you can prepare and enjoy them!).
