WHOLE GRAIN PEANUT BUTTER BANANA MUFFINS

I have to tell you something.

And you might not believe me.

Especially given these.

But, I actually HATE bananas.

True story.

Actually, I should amend that statement.

I hate bananas…UNLESS they’re baked in something.  Same thing with blueberries.  Slap those suckers into a cookie or a muffin and I’m totally fine with them.  Serve them up to me on a plate by themselves and I struggle to even look at them.

Why does that happen?

I know I’m not the only one out there like that.  This girl is a self-proclaimed banana hater just like me.  Yet she eats them.

It might not seem like it makes sense….but it actually does.

And if you don’t believe me just ask Katie…she (and her 18 addendum’s) will verify my story.

Anyway, the moral of my story is that if you don’t like bananas, don’t worry, because you’ll still like these.

Especially if you crack one open, warm from the oven, and slather it with peanut butter until it melts.

Whole Grain Peanut Butter Banana Muffins (from Measure of Happiness)

Makes 12 muffins

Ingredients:

  • 2 ripe bananas, mashed
  • 1/3 cup honey
  • 1/3 cup natural peanut butter
  • 2/3 cup 0% plain Greek Yogurt (I used Chobani)
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 3/4 cup whole-wheat flour

Directions:

  1. Preheat the oven to 375 degrees. Line muffin tins with baking cups and lightly spray with canola oil.
  2. Mix the wet ingredients together–mashed banana, honey, peanut butter, yogurt, and vanilla. In a separate bowl, combine the dry ingredients (flours, salt, baking powder, baking soda, sugar, and cinnamon).
  3. Add the wet and dry together and stir until just combined – do not over mix.
  4. Using an ice cream scoop, divide the batter into the muffin tin until the cups are 3/4 full and bake on the middle rack in the oven for 15 minutes or until a toothpick comes out clean.
  5. Serve warm and slather with peanut butter

    Funny because I’m not the biggest fan of bananas myself but I always have a ton on hand. I like them in things, yogurt bowls, baked goods, etc. but I hate to eat them alone.

    These muffins look fab lady!

    These look great! I am with you and Katie…I am not a big banana eater. Actually the only way I like them is frozen and then blended in a smoothie.

    I was the same way when I was a kid. I hated eating bananas, but I loved them baked in things. Jay is that way too! He won’t touch a banana, but he begs me to bake banana bread. They do make some mighty tasty baked goods!

    ugh banana muffins are my favorite and peanut butter makes them a million times better! I wish I hadn’t had breakfast already and I wish I wasn’t at work right now!

    Yessssssssss! It SO does make sense. Maybe because we basically have the same brain…but it SO does make sense. Oh, and peanut butter and bananas and BREAD? You’ve got it exactly right.

    LOVE it!!! …..My husband is allergic to bananas so if I don’t get them all eaten, I have some yucky ones sitting around- love finding new muffin recipes!

      These freeze really well too so if you can’t eat the whole batch in time, just pop them in the freezer and they’re great for grab and go snacks 🙂

    i dont really like bananas planeither but why do I still buy them?! I do like them frozen, just by themselves or in smoothies.

      Haha I know. Everytime I look in my cart and see a thing of bananas I feel slightly confused. But I always use them!
