these simple bars are great for an on-the-go snack option. budget-friendly and requiring just 2 ingredients – you’ll want to make them again and again!

I’m 100% addicted to these.  Which, outside of chocolate & peanut butter, is a pretty hard thing to say about something that only contains 2 ingredients.

I know all my Larabar fans out there know what I’m talking about!  These bars just prove that sometimes, less really is more.

I especially love these because if you can utilize the bulk bins, you can make these suckers for about $0.50 a piece!

Another bonus is that you have more control of the ingredients.  For example, I chose the unsalted dry roasted peanuts and I omitted adding any extra salt so as to control the sodium in these bars.

Description

these simple bars are great for an on-the-go snack option. budget-friendly and requiring just 2 ingredients – you’ll want to make them again and again!


Ingredients

Scale
  • 1 cup unsalted dry roasted peanuts
  • 1 cup dates*

Instructions

  1. Process the peanuts in the food processor until they look like coarse crumbs.
  2. Remove the peanuts from the food processor and place in a separate bowl.
  3. If soaking the dates in warm water, remove from the water and add to the food processor.
  4. Pulse until well broken up and no large chunks remain.
  5. Add the peanuts back to the food processor and process until well combined.
  6. Roll into one big ball and wrap in plastic wrap then press into an even square with your hands (about 1/2 inch thick)
  7. Open up plastic wrap, slice into 4 bars then wrap individually in plastic wrap for later use.

Notes

*My Cook’s Illustrated cookbook recommends soaking the dates in hot water (this is what I did for about 5 minutes) in order to help with their stickiness. You can also grease your food processor blade with canola oil to help with this.

** You can also choose to roll into small balls rather than bars!

    I just made these with cocoa roasted almonds (didn’t have any peanuts at home), and they are so, so good. Thank you for the recipe!
