The weekend is almost here which means thoughts of brunch are swirling around in my head!
Lucky for you guys, I’ve got the perfect dish for you guys this weekend! These whole grain carrot cake waffles are full of carrot cake flavor without having to actually ice the cake (although, you could ice these if you felt so motivated )
I personally think they’re just perfect warm from the waffle iron with a little bit of earth balance (or butter!) and some pure maple syrup.
They get some sweetness from the raisins and crunch from the walnuts making every bite just perfect. Plus, you’re getting veggies with breakfast!
I promise you everyone in the house will be thrilled you made these – and you will too because it will leave your house smelling like carrot-cakey goodness.
And, as timing would have it – it also makes for a perfect Easter brunch if you celebrate! If you don’t, it’s still loaded with yummy spring flavors that are definitely worth bringing to the table any time 🙂
Ingredients
- 1 and 1/4 cups white whole wheat flour
- 1 tablespoon baking powder
- 1 tablespoon sugar
- 1/4 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 beaten egg
- 1 cup milk
- 2 tablespoons canola oil
- 1 teaspoon vanilla
- 1/2 - 2/3 cup peeled, finely grated carrot
- 1/3 cup raisins
- 1/4 cup walnuts, roughly chopped
- Optional Toppings: earth balance/butter, pure maple syrup
Instructions
- Preheat waffle iron
- Combine flour, baking powder, sugar, spices and salt, mixing well then set aside
- Combine egg, milk, oil and vanilla whisking well
- Add wet ingredients to dry stirring gently until just combined
- Fold in carrots, raisins and walnuts
- Add 1/4 cup of batter to each section to the waffle iron and cook until desired doneness
- Remove from the waffle iron, top with earth balance or butter and pure maple syrup and enjoy!
