Okay you guys, get ready to have your minds blown. I’ve NEVER made homemade salsa before. I have no idea why – for some reason I felt like it would just be intimidating to do.

If you’re in the same boat I was, I’m here to tell you, as a reformed non-salsa making individual, it is 100% the way to go. I’ve never had fresher, more delicious tasting salsa in my life.

This is also ridiculously easy to make. In fact, it’s easier than the effort of going to the store to buy a jar, I promise you.

Into the blender goes a few fresh veggies, herbs, salt & pepper and viola! You’ve got delicious homemade pico de gallo that goes with everything from chips to tacos and beyond.

Description

this fresh & delicious pico de gallo takes all of 5 minutes to make (and less than that to gobble up!). perfect for all your taco tuesday needs and beyond!


Ingredients

Scale
  • 3–4 vine-ripe tomatoes, washed, cored & quartered
  • 1/4 red onion, roughly chopped
  • Large bunch of cilantro leaves (~1/4 cup)
  • 1 jalapeno pepper, washed, de-seeded and sliced (more or less depending on how spicy you like your salsa)
  • 1 clove garlic, peeled
  • Juice of 1 lime
  • Salt & pepper to taste

Instructions

  1. Place everything into a food processor and pulse until everything is in tiny pieces.

Notes

  1. Fresh pico will keep for up to 4 days in an airtight container in the fridge.
  2. If you prefer less heat, swap the jalapeno for 1/2 a green bell pepper
