this easy salad takes just minutes to make and is loaded with summer flavor. salty burrata mixes with sweet, juicy peaches and tomatoes plus savory grilled chicken for a mid-day meal you’ll love!

You guys know I’m loving my fruit, nut & cheese salads this summer so this should be no surprise!

If you haven’t started adding summer fruit to your salads yet, you NEED to do it! And if peaches aren’t your thing, try this cherry & feta farro salad or this nectarine, cherry & almond spinach quinoa bowl or this watermelon feta & farro bowl!

If you like the sweet/salty flavor combo, then this salad is for you. It’s all finished off with crunchy walnuts and onions and creamy burrata then a drizzle of olive oil and balsamic.

It’s truly a combination of flavors you can’t go wrong with.

If you’re not a chicken fan, you can totally sub in chickpeas or even crispy bacon. For even more flavor, you can also grill the peaches – that nice charred taste would pair beautifully with the rest of the dish.

No matter what you do to make this salad your own, I promise it’ll still be delicious. It’s combining some of summer’s best fresh produce, so you can’t really go wrong. I recommend serving with a big old piece of crusty whole grain bread!

Description

this easy salad takes just minutes to make and is loaded with summer flavor. salty burrata mixes with sweet, juicy peaches and tomatoes plus savory grilled chicken for a mid-day meal you’ll love!


Ingredients

Scale
  • 2 large handfuls of arugula
  • 10 thin red onion rings, sliced in half
  • 1 large ball of burrata, broken into 1 inch pieces
  • 2–3 oz. grilled chicken (rotisserie chicken would work as well)
  • 1/3 cup heirloom cherry tomatoes, washed & halved
  • 1 peach, washed, pitted and thinly sliced
  • 1 tablespoon roughly chopped walnuts
  • 1/4 avocado, thinly sliced
  • 1–2 tablespoons olive oil (more or less as needed)
  • 1 tablespoon balsamic vinegar or glaze (more or less as needed)
  • Salt & pepper, to taste
  • For serving: fresh lime wedges

Instructions

  1. Layer ingredients into a bowl, toss with olive oil & balsamic until fully coated.
