farro lovers rejoice! it’s no longer just a main meal food. this breakfast farro brings a nutty, delicious chewiness to your first meal of the day. done in just a handful of minutes, it’ll be your new go-to.

If you’re a farro fan like I am, then I promise you you’re going to love this easy breakfast farro. No longer is this delicious grain designated to the afternoon and evening hours!

The best part is that you can use made pre-made farro (I recommend prepping a batch over the weekend to use all week) and then all you need to do is top it!

For me, Fall starts September 1 (which means I pull out my apples and start using them in everything) so I went with an apple raisin walnut mix. I gently sautéed some chopped apples and raisins in a little bit of butter, brown sugar and apple pie spice. While that sautéed, I toasted some almonds and breakfast was pretty much done!

Top it with a little bit of warmed milk and you’re on your way.

You’re getting whole grains, fiber, heart-healthy fats and a little protein not to mention a slew of vitamins and minerals out of this dish. It’s also loaded with comforting fall flavors.

Enjoy this hot off the stove or pack it up in a mason jar and eat it on your way to work and be prepared to feel satisfied all morning long.

apple raisin walnut breakfast farro

Ingredients

Scale
  • 1 cup cooked farro
  • 1–2 tablespoons butter or earth balance
  • 2 small apples, washed, cored & diced
  • 1/3 – 1/2 cup raisins
  • 1/4 – 1/3 cup roughly chopped walnuts, toasted (toasting is optional but highly recommended!)
  • 1 teaspoon apple pie spice (more or less as desired, feel free to swap cinnamon if you don’t have apple pie spice)
  • 1 tablespoon brown sugar (more or less as desired)
  • 1–2 cups warmed milk
  • Optional for serving: drizzle of maple syrup or honey

Instructions

  1. Preheat oven to 350 degrees F and place walnuts on a baking sheet.  Toast for 5-10 minutes (being careful not to burn).
  2. While walnuts toast, place a large non-stick skillet over medium low heat, add butter.  Once butter has mostly melted, add brown sugar, apples, raisins and apple pie spice.  Saute until raisins are plump, apples are tender and the butter & sugar have thickened slightly (about 5 minutes).
  3. Add farro to the saute pan and mix to combine so that all the flavors meld.
  4. Ladle into 2 bowls then pour warm milk over each serving.  Drizzle with maple syrup or honey as desired.
