You know how this summer I was obsessed with adding fruit to all my salads? (Like this watermelon & feta farro bowl, this peach, burrata & grilled chicken arugula salad, this cherry farro & feta salad, this transitional harvest bounty salad…I could go on!).
Well I think the thing this fall might be adding produce to sandwiches!
It all started because I’ve been watching the bread episode of the Great British Bake Bake-Off (anyone else obsessed with that show and so glad it’s on Netflix?!) and got a hankering to make bread.
I remembered this whole grain cranberry walnut loaf from a couple years back and felt like it would be perfect for breakfasts and lunches for the week and immediately got to work on it.
As I was thinking about what my weekly packed lunch idea could be, I spotted this bread out of the corner of my eye & knew it had to be involved. A few minutes of rummaging through the fridge and the whole sandwich\ came to me in a flash!
Packed with whole grains, heart-healthy fats, protein, fiber and FLAVOR, it’s definitely going to become a go-to for my Fall lunches!
It’s quick, easy and filling making it the perfect weekday meal. I promise you’ll be the envy of all your co-workers if this makes it into your packed lunch!
And if you want to keep it vegetarian, just omit the turkey! You’re still getting plenty of protein from the other elements.

freshly sliced turkey is sandwiched between two slices of whole grain cranberry walnut bread along with melty cheddar, crisp apple, peppery arugula, red onions and honey mustard for a mid-day meal that’s perfect for the season!
Ingredients
- 2 slices of whole grain cranberry walnut bread (if you’re not into bread making, you can find this in the bakery section of your local grocery store or see if your local bakery has a loaf!)
- 3–4 oz. lower sodium turkey breast (I love Boar’s Head)
- 2 slices of white cheddar cheese
- 5–7 rings of red onion
- 5–7 thinly sliced apples or pears (or a mix of both!)
- Handful of arugula
- 1–2 tablespoons honey mustard
Instructions
- Layer the slices of cheddar onto the bread and toast to allow the cheese to melt & bread to toast (*see note)
- Spread each side with honey mustard then layer arugula on one side.
- Place thinly sliced apples (or pears or a mix of both, if using) on the other side of the bread on top of the melted cheddar and honey mustard
- On top of the apples layer turkey then onions.
- Sandwich the bread together, slice in half and enjoy!
Notes
- If you want to pack this for lunch, you can skip the toasting. I’ve never had a problem with toasting bread and then packing it, but if it’s not for you, feel free to nix it.
