Happy Monday!

I hope you all enjoyed your weekends – ours was low-key but definitely what we needed.  If you’re just catching up:

Friday night I made Baked Ravioli and drank a $3.99 bottle of wine (and enjoyed it!).

Saturday morning I dug into the last of my Kodiak Cake Whole Wheat, Honey, Oat Belgian Waffles.

Saturday afternoon I declared some things are worth repeating.

Saturday night we had delicious, healthy and the easiest ever chicken tacos.

Sunday brunch was in celebration of Cait’s Plate’s 3rd Birthday!

Sunday evening I brought the heat with a deliciously spicy (and healthy!) pasta dish.

I also managed to sneak in a summertime cone for dessert last night.

And somehow despite that, I woke up wanting yogurt.

Yogurt with a cherry on top to be exact.

I filled up my mason jar with a slight layer of Trader Joe’s sunflower seed butter..

Then Trader Joe’s Non-Fat Greek-Style Yogurt + chia seeds…

Then some Cville Cluster Granola…

Then a mix of red and rainier cherries…

Repeated once more and topped off with a cherry!

All that was left to do after that was dig in!

And because so many of you usually wonder…I in fact DID eat this straight out of the jar!

      Thank you! And I know – that’s always my struggle…to cut it or not to cut it. If I DO cut it, I usually regret it!

    I like the hair shorter!! Maybe a bit longer than in that picture, but I think it’d look cute short!!

    I love the idea of eating this from a mason jar and cherries! Gosh they are heavenly right now! Hope you are having a great start to the week.

      They most certainly are. And parfaits from mason jars are the best because you can really get in there…which, let’s be honest is the most important part 😉

    Okay so your breakfast officially wins as the best looking breakfast I have seen in oh…forever! This looks amazing!!!

    As for your hair…I think you will look precious either way but I have always been very partial to long hair. Total side note…those turquoise jeans you had on this weekend and posted on Instagram…adorable! I must know where those are from! 🙂

      Hahaha – I love that! It was pretty delicious. You can’t really beat fresh cherries!

      And I agree – I’m partial to long hair as well which is why I NEVER cut it. It’s going to take a lot of thought before I make a decision for sure.

      And the jeans – you’re gonna laugh. I actually got them from Delia’s YEARS ago. They’re super comfortable!

    I’m enjoying shorter hair these days! You would look super cute with short hair, but then again, you look cute with long hair too! Oh and I’ve been loving the heck out of cherries lately too! They are so good right now!

    You do have lovely hair but if you want to cut it don’t be afraid. Hair grows, don’t forget! I had long hair for several years until a couple years ago when the managers in the hospital lab where I’m a tech became picky about people having their hair up if it was long. I could see the point but I refused to have nice long hair to put it in an ugly ponytail every day (plus it makes my scalp hurt). I chopped it off a week later and recently went even shorter. I haven’t regretted it yet!:)

      Woohoo! I like to hear stories like that! And you’re absolutely right – the one thing I always forget is that hair grows! It might be nice to have it off my neck for the summer, that’s for sure!

hear me out. I know we've been taught to celebrat hear me out.  I know we've been taught to celebrate things like weight loss, toned muscles, beauty procedures that help us look younger...but here's why I always caution against putting so much focus on appearance:⠀⠀⠀⠀⠀⠀⠀⠀⠀

bodies change.  weight fluctuates. skin sags and wrinkles.  hair grays.  these are all part of the natural process (& privilege) of aging.⠀⠀⠀⠀⠀⠀⠀⠀⠀

we live in a society that promotes this backward idea that our appearance should remain stable despite years passing.⠀⠀⠀⠀⠀⠀⠀⠀⠀

rather than internalizing the false idea that we need always be reaching backward and working to re-obtain what once was, allow your body to showcase the beautiful signs that you were given yet another day to walk this earth.  another chance to pursue your passion and purpose...both of which are so much more important than how you look.⠀⠀⠀⠀⠀⠀⠀⠀⠀

tweaked my slow cooker turkey, bean & veggie chili tweaked my slow cooker turkey, bean & veggie chili this past week to make it meatless and it was 🙌🏼⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
here’s how I did it:⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/2 red onion, finely chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 cup diced bell peppers (I used a mixture)⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 3 cloves garlic, minced⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 tablespoons tomato paste⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 (28-oz.) can diced tomatoes⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 15-oz. can black beans, rinsed and drained⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1  15-oz. can kidney beans, rinsed and drained⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 1/2 cups veggie broth⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 3 teaspoons chili powder (+/- as desired)⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 teaspoon ground cumin⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 teaspoon dried oregano⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1-2 sweet potatoes, peeled & cut into 2 inch cubes⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Salt & pepper, to taste⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2-4 tbsp. olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 cups cooked quinoa⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
place everything but the quinoa into a slow cooker & place on HIGH for 4 hours.  Stir in cooked quinoa & add additional salt / pepper / spices to taste.  top with your favorite toppings (I love cheese, avocado, yogurt & hot sauce).⠀⠀⠀⠀⠀⠀⠀⠀⠀

this chili is great right away (even better after a day to marinate in the fridge) and is an easy make-ahead meal you can enjoy all week!⠀⠀⠀⠀⠀⠀⠀⠀⠀

for me it was definitely the "don't eat after 6pm" rule 🤔
⠀⠀⠀⠀⠀⠀⠀⠀⠀
hunger and digestion are not run by the clock.  there are so many factors that can go into why we feel hungry from one moment to the next, and that feeling of hunger is always valid and should be honored, regardless of the time of day.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
similarly, there are no 'right' or 'wrong' times to eat a meal.  breakfast, lunch and dinner are not bound to specific windows of time.  each can be eaten whenever you & your body deem it appropriate.

this veggie sushi grain bowl takes all your favorite flavors from a veggie sushi roll and deconstructs it into an easy lunch.⠀⠀⠀⠀⠀⠀⠀⠀⠀

finished off with an Asian ginger vinaigrette, it will definitely be a meal you make time and time again.⠀⠀⠀⠀⠀⠀⠀⠀⠀

- 1/2 cup cucumbers, thinly sliced⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 avocado, sliced⠀⠀⠀⠀⠀⠀⠀⠀⠀
