BANANA COFFEE CAKE WITH PECAN BROWN SUGAR STREUSEL TOPPING

Two more bananas down!

I was SO excited to make this.  It combined two of my major goals – homemade coffee cake and using up bananas.

Plus it included a streusel topping…which truthfully, pretty  much sold me on the whole thing.

As far as I’m concerned, coffee cakes don’t get much better.  It’s packed with fiber from the whole grain, it’s got built-in fruit PLUS healthy fats from the pecans in the streusel.

{banana coffee cake with pecan brown sugar streusel topping} – adapted from bright eyed baker

makes 9 squares

ingredients for streusel topping:

  • 1/2 cup pecans, chopped
  • 1/2 cup white whole wheat flour
  • 1/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1/4 teaspoon pumpkin pie spice
  • 4 tablespoons unsalted butter, cubed and slightly softened

directions for streusel topping:

  1. Combine all ingredients together in a bowl, mixing with your hands until crumbly.  Store in the refrigerator until ready to top coffee cake.

ingredients for coffee cake:

  • 2 cups white whole wheat flour
  • 1 3/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup canola oil
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1/4 cup plain greek yogurt (I used Chobani)
  • 2 large bananas, roughly mashed

directions for the coffee cake:

  1. Preheat the oven to 350 degrees F.
  2. Grease an 8 inch square baking pan.
  3. Combine flour, baking powder, baking soda and salt in a medium bowl and stir to integrate all the ingredients.
  4. In a separate bowl, combine oil, sugar, egg, yogurt and bananas.  Mix until well combined.
  5. Add dry ingredients to wet stirring with a rubber spatula until just combined (be sure not to over-mix or the coffee cake will be tough).
  6. Remove prepared streusel topping from the fridge and top the coffee cake batter evenly.
  7. Bake for 40-45 minutes or until a toothpick comes out clean.

    This is great as I’m always looking for creative ways to use up bananas! I’ve never heard of white whole wheat flour, but it sounds pretty perfect!

      It’s wonderful! It bakes similar to all-purpose flour but you get the benefit of whole grains! King Arthur makes my favorite one but Trader Joe’s also makes a good one!

    ooooh heck. This looks so good. banana cake is my favorite…but add COFFEE and that glorious streusel topping…can’t even deal.

    I like the new profile pic, too!!! This sounds yummy, and seriously, don’t stop with the banana recipes. I live with monkeys so we ALWAYS have plenty 😉 hahaha
