this easy wrap combines kale, chickpeas, feta cheese and caesar dressing. coming together in just minutes, it makes a perfect meal for busy weekdays. pack it up for lunch or eat it for a simple dinner!

I don’t know about you all, but I’ve spent the last week cooking and baking for one holiday gathering after another.

Today, all I wanted was something SIMPLE.

Enter this easy chickpea kale caesar wrap. It literally takes about 10 minutes to pull together and only uses a handful of ingredients.

That’s just about as dreamy as it gets to me after a long month of hosting and attending different holiday events!

In this wrap I swap out the traditional chicken for chickpeas making it not only meatless, but more budget-friendly (I don’t know about you – but after the holidays I’m down with ANYTHING that’s on the cost conservative side of things!).

I use my favorite Newman’s Own creamy caesar dressing to keep this simple and quick, but if you have a favorite homemade caesar dressing recipe, definitely use that!

I also love to swap the slightly tangy feta for the usual parmesan. Something about it just makes the wrap SO much better to me.

I’ve also been known to throw some homemade croutons right in there, which I also highly recommend! I kept them out this time and chose to serve with potato chips for that crunch, but I highly recommend giving it a try if you’ve never done so before!

Description

  • 1 large whole grain wrap (I like Joseph’s lavash)
  • 2 large handfuls kale leaves, stems removed, roughly chopped
  • 1/3 cup canned chickpeas, drained & rinsed
  • 2-4 tablespoons crumbled feta cheese
  • Caesar dressing (as much or as little as you prefer)
  • Salt & pepper, to taste

Ingredients

Scale
  • 1 large whole grain wrap (I like Joseph’s lavash)
  • 2 large handfuls kale leaves, stems removed, roughly chopped
  • 1/3 cup canned chickpeas, drained & rinsed, roughly chopped
  • 2–4 tablespoons crumbled feta cheese
  • Caesar dressing (as much or as little as you prefer)
  • Salt & pepper, to taste

Instructions

  1. Combine everything into a large bowl and toss to combine.
  2. Lay wrap flat, add 1/2 cup or so of the filling on one end then roll up.
  3. Slice and serve.

Notes

  • Don’t go too heavy on the dressing or it may cause the wrap to break.
  • If packing for lunch, omit the dressing and pack separately either dipping the wrap into it or pouring into the wrap as you eat.  This will help avoid the wrap getting too soggy and breaking.  You can also prepare the salad portion and pack the wrap separately, assembling right before eating.
