I shared this last summer just on Instagram and have wanted to give it it’s own space on the blog for a while now.
It’s one of my favorite easy lunches and it’s perfect for this warmer spring weather. It’s satisfying and refreshing all at the same time!
I love this sandwich not only because it’s quick and easy but because you can truly customize it in whatever way floats your boat.
I’ve added roasted chicken to it, green peppers, my mom would definitely add olives. Whatever you like best. I made it with spinach this time but have made it with romaine in the past.
However you choose to serve it, I promise you will love it. It’s basically like a big greek salad all rolled into an easy, portable sandwich!
Pair it with some fruit and some chips and you’ve got yourself an easy meal!

Description
this greek salad sandwich packs the punch of your favorite greek salad all into a sandwich! one of my favorite easy lunches.
Ingredients
- 2 slices bread (toasted)
- 2 tablespoons hummus
- 2 tablespoons tzatziki sauce
- 1–2 tablespoons feta cheese
- 5 slices red onion (sliced thin)
- 3–4 slices tomato (sliced thin)
- 4 slices cucumber (sliced thin)
- Pepper, to taste
Instructions
- Spread one side of toasted bread with hummus and the other with tzatziki.
- Follow that with feta cheese, cucumbers and a sprinkle of pepper on one side then onions and tomatoes on the other.
- Add leafy greens, sandwich together, slice and enjoy!
Notes
- Feel free to get as creative as you’d like. Add sliced roasted chicken if you like, green peppers, olives…whatever combination you like best!
