Let’s be honest, back to school time, as great as it is, can also be insanely busy. It’s one thing if you’re just trying to get yourself to school or work. But throw in kids and pets and significant others that also need help and it can definitely leave your head spinning.
My goal is always to try to make your lives easier, and let me tell you – this make ahead mixed berry & yogurt french toast casserole is definitely going to do that.
Not only will it make your life easier, but you’ll be the star of the household because…who doesn’t want french toast on a weekday morning?! I have yet to meet anyone.
This is great because you can pull it together over the weekend and then all you have to do is re-heat and eat all week long. You can also pack it up as a grab and go breakfast or snack with some yogurt and berries.
And honestly, you can customize it in whatever way makes the most sense for you and your household. If you are a family of banana lovers, use those instead of berries. Apples, pears, peaches…pretty much anything would work here (another bonus to this recipe!). Same goes for the bread – use whatever is your favorite (gluten-free works too!).
This dish is providing fiber, protein (more if you pair it with yogurt) and a stress-free morning for you. Definitely worth the 10 minutes it takes to pull together over the weekend if you ask me!

Ingredients
- 1 loaf bread
- 6 large eggs
- 2 cups milk (any kind!)
- 1/3 cup mixed berry or plain greek or skyr yogurt
- 1 1/2 tablespoons vanilla extract
- 2 tablespoons granulated sugar
- 1 teaspoon lemon zest
- 2 cups mixed berries, washed and halved
- Optional for serving: more fresh berries, syrup and greek or skyr yogurt
Instructions
- Grease a 9×13 inch baking dish with cooking spray and set aside
- Combine eggs, milk, yogurt, vanilla, sugar and lemon zest and whisk well to combine.
- Lay slices of @potatorolls bread into the prepared baking dish (some overlap is perfectly fine) then top with egg mixture.
- Add mixed berries to the dish, tucking them in between the layers of the bread.
- Cover and refrigerate for at least 1 hour or overnight.
- A few minutes before you’re ready to bake, preheat oven to 350 degrees F.
- Bake for 45-55 minutes or until bread is golden brown on top and casserole is set.
- Serve with additional mixed berries, yogurt and maple syrup!
Notes
- Casserole will keep in the fridge in an airtight container for up to 5 days. To reheat, simply slice and heat in the microwave on 30 seconds or until to your desired warmth. You may also re-heat on 350 degrees F for 10-15 minutes for a crispier finish.
