The other day I was really craving an oatmeal raisin cookie but just didn’t have the energy to make a batch of them.

Then it occurred to me, I could just make some no-bake bites!

And oh my gosh you guys, these far exceeded my expectations! I figured they would taste something like the real deal but never expected them to be as close to it as these were!

They seriously come together in 10 minutes (less if you just press them into bars!) and taste exactly like eating an oatmeal cookie.

I always keep dates and nuts on hand so that I can make energy bites whenever I want them and in this instance I was so glad that did.

What’s better than a no-bake bite that literally tastes exactly like a cookie? I’ll tell you: nothing!

Description

these no-bake bites come together in a matter of minutes and are packed with oatmeal raisin cookie flavor!


Ingredients

Scale
  • 1/2 cup chopped, pitted dates
  • 1/2 cup raisins
  • 1/2 cup walnuts
  • 2/3 cup rolled oats
  • 1/2 tsp cinnamon
  • 1 teaspoon pure vanilla extract
  • Optional: 1/8 – 1/4 teaspoon salt

Instructions

  • Combine all ingredients together in a food processor and process until they form a fine crumb (dough should stick together when pressed).
  • Using a cookie scoop, scoop out 1-2 tablespoon-sized balls and roll tightly

Notes

  • Store in an airtight container or bag for up to 2 weeks (if they last that long!)
