Peach Cobbler in a Jar

0 · Jun 21, 2012 · 10 Comments

If you follow me on Instagram, you know how dinner turned out last night.

Getting through this GRE class is a grind – I’ll be happy when it’s over and behind me!  In the meantime, I apologize for less than stellar meals between now and then!

Breakfast all but made up for it though!

I knew last night that breakfast would include this nearly-empty jar of peanut butter.  I only wish I’d had the foresight to whip up overnight oats.

Oh well – there’s always tomorrow!

In the jar went:

  • 1/2 cup rolled oats
  • 1 tbsp. chia seeds
  • Diced peach
  • 1 cup water

Topped with LoveGrown Simply Oats granola

Like a peach cobbler in a jar.

Time to get crackin’!

Overnight oats are CLUTCH when you have a jam-packed schedule. I don’t even know how you are making those LATE classes work…my brain is asleep by that time.
