this grain bowl takes all your favorite flavors from a veggie sushi roll and deconstructs it into an easy, packable lunch.

I love a veggie sushi roll. Especially with a side of edamame.

That said, getting out to a sushi restaurant with Chad these days doesn’t come easy between Ollie and Owen so when the craving struck the other day, I decided to get a little creative with what I had on hand.

And I’m glad I did because out came this delicious grain bowl!

It has all my favorite flavors that come in a veggie sushi roll (plus the edamame I always get on the side!).

Not to mention it comes together in a matter of minutes. All it takes is a little chopping and assembly and it’s done!.

One extra addition? This easy Asian ginger vinaigrette. It really makes the dish so much better than just the usual soy dipping sauce.

It has all the flavors you would want to dip your veggie sushi roll in – fresh ginger, soy sauce, rice vinegar and a little hint of honey.

If you want to pack it up for lunch, simply omit the dressing and add it once you’re ready to dig in!

Description

this grain bowl takes all your favorite flavors from a veggie sushi roll and deconstructs it into an easy, packable lunch.


Ingredients

Scale

For the Grain Bowl:

  • 2 cups whole grain brown rice, cooked
  • 1 cup steamed shelled edamame
  • 2 cups carrots, peeled & cut into ribbons (you can also shredded or thinly slice them)
  • 1/2 cup cucumbers, thinly sliced
  • 1 avocado, sliced
  • Optional: black sesame seeds

For the Dressing (recipe from All Recipes):

  • 3 cloves garlic, minced
  • 2 tablespoons fresh ginger root, peeled & minced
  • 3/4 cup olive oil
  • 1/3 cup soy sauce
  • 3 tablespoons honey
  • 1/3 cup rice vinegar
  • 1/4 cup water

Instructions

For the Grain Bowl:

  1. Combine all ingredients into bowl and toss to combine.

For the Dressing:

  1. Combine all ingredients in a food processor or blender and blend until smooth.
  2. Drizzle over bowls before serving.
