corn and zucchini bring springtime to your pizza!Β  this fresh take on the usual pizza is a great dish to usher in spring with!Β  using just 6 ingredients and 15 minutes of your time, it’s as easy as it is delicious!

YOU GUYS.

This pizza is literally summer, in pizza form.  Everything about it just makes me so incredibly excited for summer!  I have such fond memories of eating corn on the cob on our back deck by the pool, music playing while my dad grilled burgers and summer squash for dinner.

Aside from the wonderful summer memories it evokes, it’s also a pretty perfect spring dish!  I know we’re still weeks away from summer so this pizza is a great way to get excited for it while still celebrating the spring produce that has started to pop up in the stores.

You can also get as crazy with this pizza as you want.  You could add fresh tomatoes, yellow squash, asparagus.  I wanted to keep it to these simple ingredients, but honestly the world is your oyster!  Get out there and add as many ingredients as your heart desires πŸ™‚

Whether you choose to put your own spin on it or not, you can feel good knowing that as its base, it’s providing you whole grains from the crust, protein from the cheese, veggies and heart-healthy fat thanks to it’s subtle olive oil layer.

Description

corn and zucchini bring springtime to your pizza!Β  this fresh take on the usual pizza is a great dish to usher in spring with!Β  using just 6 ingredients and 15 minutes of your time, it’s as easy as it is delicious!


Ingredients

Scale
  • 1 whole wheat pizza dough crust (such asΒ Boboli) or 1 lb. fresh whole wheat pizza dough, rolled out into a circle
  • 1 medium zucchini, thinly sliced or spiralized
  • 1/3 cup yellow corn (fresh, frozen or canned!)
  • 1 ball fresh mozzarella cheese
  • Garlic oil (see note)
  • Fresh black pepper

Instructions

  1. Preheat the oven to 400 degrees F
  2. Drizzle pizza crust with olive oil
  3. Rip mozzarella cheese into chunks and place a few on top of the garlic oil
  4. Layer zucchini and corn evenly across the pizza
  5. Rip more mozzarella cheese into chunks and place on top
  6. Bake for about 10 minutes or until cheese starts to brown and bubble
  7. Remove from the oven
  8. Sprinkle with fresh black pepper before serving

    Notes

    • For the garlic oil, mix 1 cup extra virgin olive oil, with 6 cloves minced garlic
