Getting delicious dinners on the table doe not have to be a struggle, I promise! Read on to find 8 wholesome and healthy dinner ideas that come together easily, are filling and packed with flavor. The majority of them can be on the table in under 30 minutes and are sure to satisfy everyone in the household.
1. BLACK BEAN AND CORN ENCHILADAS
I love this dish for so many reasons not the least of which is how quickly it comes together and how incredibly satisfying it is. Plus, it’s meatless (though you’d never know it!) so it’s on the cheaper side. I recommend serving them up with a side of brown rice, guacamole, plain greek yogurt and some blue corn tortilla chips.
2. CALIFORNIA CLUB PIZZA ON WHEAT
This dish comes together in minutes thanks to a little short cut – store-bought pizza dough! You can of course always make your own dough, but the store-bought is great in a pinch and it doesn’t take away from the meal at all!
3. 5-INGREDIENT WHOLE WHEAT PESTO SPAGHETTI WITH SAUTEED VEGETABLES AND CHICKEN SAUSAGE
To me, pesto can make any meal better and this dish is no exception! It’s SO simple yet so flavorful. The combination of the whole wheat spaghetti, chicken sausage and veggies makes it wonderfully filling as well. It’s a favorite in our household and I promise it will be in yours too!
4. COMFORTING HARVEST VEGETABLE CURRY
Another vegetarian option, but one that’s so hearty and satisfying even the biggest meat eaters in the house will love it. On top of it being budget-friendly, it’s also a one-pot dish making dinner time even easier. Hard not to love a meal without a lot of cleanup, am I right?!
5. EASY VEGGIE-PACKED MEXICAN CASSEROLE
Are you noticing the ‘easy’ theme here?? I’m hoping this post is convincing you that healthy, wholesome dinners are achievable! And not only achievable, but delicious. This is another one of our favorites – it’s so nice to have a dish that gets the majority of your food groups all into one bite! Plus, it’s loaded with veggies so you can even feel good about eating seconds 😉
6. SPICY BLACK BEAN BURGERS WITH CHIPOTLE ADOBO SAUCE
Homemade veggie burgers are ridiculously easy and the chipotle adobo yogurt sauce makes these burgers out of this world (I recommend serving these burgers with these or these). The best part is you can make a bunch and have them on hand all week long!
7. STEAMED LENTILS OVER WHOLE WHEAT COUSCOUS
Buying pre-steamed and pre-seasoned lentils (I love Trader Joe’s) makes this dish an absolute cinch to pull together. And the best part is that it’s pretty versatile in terms of the flavors it can take on – you can top it with hummus, feta or a sauce of your choosing! You can also sauté the kale with garlic and onion bringing even more flavor to the dish! Use it as a base and go from there 🙂
8. WHOLE WHEAT BLACK BEAN CORN AND SWEET POTATO QUESADILLAS
If you follow me on Instagram, you know these are a favorite of mine. They’re quick and easy, full of flavor and wholly satisfying! I almost always have these ingredients on hand which makes it a great meal to pull together towards the end of the week when groceries are running low. Plus they’re a nice change up from the usual plated dinner…you can down these suckers with your hands 🙂
