I recently had a bowl of oatmeal at a local coffee shop one morning when I was running late.  I figured it would do in a pinch.

Little did I know that bowl of oatmeal was going to become a new breakfast obsession of mine!  Upon first bite I immediately started dreaming about how I had to recreate it at home – which I have done at least once a week since that very first bowl.

It’s so ridiculously simple but so incredibly delicious.  It just goes to show (as I always say!) sometimes simple is just the best.

This bowl of oats comes together in under 5 minutes and is packed with filling fiber from the oats, a hint of sweetness from the cranberries and crunch from the walnuts.  Definitely worth adding to your morning routine!

Description

these easy cranberry walnut oats rely completely on pantry staples making them an easy dish to pull together any time!


Ingredients

Scale
  • 1/2 cup old fashioned rolled oats
  • 1 tablespoon chia seeds
  • 2/3 cup water or milk (more or less as needed for oats to be submerged)
  • 1 tablespoon brown sugar (more or less for desired sweetness)
  • 1/4 cup juice-sweetened dried cranberries
  • 1–2 tablespoons walnuts

Instructions

  1. In a saucepan, combine oats, chia seeds, cranberries and liquid of choice (enough for oats and cranberries to be submerged)
  2. Place over medium low heat and stir frequently until oats begin to cook (they will look full and gelatinous) and cranberries soften and plump – about 5-7 minutes.
  3. Once oats are cooked, turn off heat & stir in brown sugar and walnuts, then serve!
