These 3-ingredient fruit bars blend coconut, chocolate and almond for an easy and delicious summer treat everyone is sure to love!

Okay guys, hold onto your hats because I just so happen to have THE perfect summer treat for you!

You know a while back how I was telling you I suddenly became head-over-heels obsessed with the chocolate/coconut/almond flavor combo?

Well the other day I was eating a coconut WholeFruit fruit bar and the idea dawned on me that I could dip it in chocolate and roll it in crushed almonds for the world’s most amazing summer treat!

And let me tell you, it was just that!  The perfect blend of sweet and salty all wrapped up in a summery, frozen fruit bar with whole chunks of fruit you can see & taste.  And the best part about it is that it takes all of 5 minutes to pull together and then the freezer does the rest of the work!

There’s nothing better than summer treats that are not only delicious but simple to make because let’s be honest, as the temperature heats up, the last think you want to do is spend a ton of time in the kitchen whipping things up.

Not a coconut fan?  WholeFruit bars come in Strawberry, Mango, Black Cherry & Watermelon!  And each of those flavors are Non-GMO Project verified, dairy-free, soy-free & gluten-free.  Each bar is made with chunks of real fruit you can see & taste – a treat that’s both delicious & nutritious!

Making these for a toddler?  I left the almonds off for Owen and he gobbled the chocolate dipped coconut bar up in minutes!

We’re already on our second batch of these in our house because they’ve been such a hit.  I’ve also done chocolate & sea salt dipped strawberry and chocolate dipped watermelon!  Next up is white chocolate dipped black cherry and I absolutely cannot wait!

3-Ingredient Chocolate Almond Coconut Fruit Bars

Description

These 3-ingredient fruit bars blend coconut, chocolate and almond for an easy and delicious summer treat everyone is sure to love!


Ingredients

Scale
  • 4 WholeFruit coconut fruit bars
  • 1 bag dark chocolate chips
  • 1 cup whole almonds, crushed (I ran mine through the food processor, pulsing until a fine crumb has formed)

Instructions

  1. Remove wrappers from coconut fruit bars and place on a parchment lined baking sheet in the freezer.
  2. Place a non-stick saucepan over low heat on the stove and add the bag of dark chocolate chips (semi-sweet or milk chocolate will also work!). Stir continuously until chocolate begins to melt.  Once there are just a few chunks remaining, remove from the heat and stir vigorously off the stove until a smooth texture is achieved.
  3. Remove coconut fruit bars from the freezer and with a large spoon, immediately pour chocolate over the top of each of the bars then dip into crushed almonds
  4. Place fruit bar back onto the parchment-lined baking sheet and repeat with remaining fruit bars. Put back in the freezer and allow to freeze until the chocolate has hardened (~1 hour).

Notes

  • Once chocolate is hardened, you can wrap individual bars in a small piece of parchment and place in a freezer safe bag or container to store.
