Feelin’ Peachy

I woke up with a hankering for peach oats like nobody’s business.

I love when I wake up knowing exactly what I want.

Makes breakfast that much better.

Into the bowl went:

  • 1/3 cup Trader Joe’s Rolled Oats
  • 2/3 cup water
  • 1 tbsp. chia seeds
  • 1 diced peach

Cooked for 2 minutes in the microwave (adding the peaches after 1 minute of cook time)

When I pulled it out of the microwave I let it sit for 1 minute and then topped it with a big spoonful of Trader Joe’s Sunflower Seed Butter and LoveGrown Simply Oats Granola.

I’m in a HUGE baking phase right now…I’m trying to resist making everything in my Cook’s Illustrated cookbook in one day…but that’s a battle I’m not sure I’ll win.

It’s a beautiful day out there. Enjoy!

    The insane heat here has kept me from baking – now that it’s under 90, I think a batch of cookies is calling my name!

    Mmmm, a big puddle of sunflower seed butter! I’m currently OBSESSED with the TJs kind, but unfortunately I live in Canada and don’t have ready access to it :(.

    I had peaches this morning too! Did you get your in Georgia? 🙂

    Cook’s Illustrated slays me. I can’t even buy the mag right now. I read an interview with a figure competitor who says she likes to bake a lot while she’s training. She can’t eat it… but it helps her or something?! I think that girl is NUTS.

      Oh my gosh I could NEVER do that! That’s some serious willpower there…

      And sadly this peach wasn’t from Georgia but I can’t wait til I’m there next to get my very first one this summer!

    I haven’t seen a peach YET here in CO. I’m waiting with anticipation for some to hit the grocery stores!! Your breakfast has my mouth watering…as always.

    i really love how your have chalkboard paint on your mason jar.. did you make that yourself!? that’d be such a cool art project to organize grains, granolas and seeds in my pantry 🙂
