this ridiculously easy breakfast comes together in under 10 minutes, is totally customizable and will remind you of all the classic flavors of banana bread.
We’re big fans of oatmeal over here in our house so every weekend I make a big batch of it so that we can eat it throughout the week.
I try to switch up the flavors each week to keep it interesting, but currently both my husband and Owen are obsessed with these banana cinnamon oats, so as I was making my millionth batch of them this weekend, I figured I should shoot it and blog it for you guys!
I’m secretly happy that they’re so into it because it is the easiest thing to make. In fact, it’s so ridiculously easy, that it’s a tough to justify not making it a go-to each week.
You can also vary the toppings and add-ins which makes it transform into a totally different dish. If you saw my Instagram video featuring these chameleon oats, you’ll see I’ve detailed two different ways (one with peanut butter & extra banana, another with brown sugar & walnuts). But the sky is seriously the limit.
You can throw some apples and slivered almonds on top, some chocolate chips & dried unsweetened coconut, some strawberries and walnuts…the number of combinations is insane.
Which to me is always a good thing when you’re batch cooking. Any way you can change it up and make it feel a little different day to day is a great way to ward off monotony.
These also make an amazing snack…so go ahead and whip up a batch, I promise you won’t be sorry you did!

Description
these easy, creamy oats are one of Owen’s absolute favorite breakfasts! they’re great to make ahead and serve throughout the week!
Ingredients
- 1 cup rolled or old fashioned oatmeal
- 1–2 tablespoons chia seeds (this is more for texture – more = thicker oatmeal because the chia seeds suck up the oats)
- 2 teaspoons cinnamon (more/less as desired!)
- 2 cups water or milk
- 2 large bananas, peeled & mashed
- Optional toppings: peanut butter, banana, walnuts, brown sugar
Instructions
- In a non-stick saucepan combine oats, chia seeds, cinnamon, water or milk and bananas. Turn stove on over low heat and begin stirring. Continue to stir oats frequently while cooking (turning the heat down if they begin to stick to the sides of the saucepan).
- Remove oats from heat when the oats are mostly gelatinous and most of the water is absorbed. If eating immediately, divvy up into two bowls and top with toppings of choice (I recommend if using peanut butter, stirring directly into the warm oats so that it’s well-distributed throughout) .
- If saving for later, store in an airtight container in the fridge for up to 3 days.
