these greek chicken & watermelon gyros make the best use of summer produce for a quick, easy & refreshing mid-day meal or dinner the whole household can enjoy!

The summer of adding fruit to everything and anything continues and boy is this a good one!

Remember when I made this watermlon and feta salad?  Well it got me thinking how incredibly delicious this would be all wrapped up gryo style and as soon as that thought entered my head, it was all I could think about.

And you know what?  I’m really glad because this.  was. DELICIOUS.

You’re getting sweet from the watermelon, salty from the feta, savory from the chicken and all of it together is just absolutely incredible.

I cheated a little and used naan bread in lieu of pita because the whole wheat pita I buy at my grocery store isn’t as pliable as naan.  I couldn’t find my favorite whole grain version so I went with the plain but honestly it didn’t even matter.

It took absolutely nothing away from the flavor and all you’re losing is a little fiber (which you’re getting from other elements in the dish anyway!)

It also makes an awesome packed lunch!  Just leave the watermelon and tzatziki out and add it in once you’re ready to eat.

All in all, it’s just about the perfect mid-day meal for summer!

these greek chicken & watermelon gyros make the best use of summer produce for a quick, easy & refreshing mid-day meal or dinner the whole household can enjoy!


Ingredients

Scale
  • 1 piece of large naan or flatbread
  • 2 tablespoons tzaztiki sauce
  • 2 tablespoons crumbled feta cheese
  • 5–7 thinly sliced cucumbers
  • 4 thinly sliced tomatoes
  • 5 thinly sliced red onion rings
  • 1–2 large leaves of romaine or other leafy green
  • 3 oz. grilled or rotisserie chicken
  • 1/4 cup diced, seedless watermelon 

Instructions

  1. Spread inside of naan bread with tzatziki sauce then layer remaining ingredients one on top of the other
  2. Roll up and enjoy!

    Can’t wait to try this recipe! I never would have thought to add watermelon as an ingredient. How much watermelon do you typically add? Thanks for sharing!

      Oh gosh – you can’t see it but I’m smacking my head! Can’t believe I forgot to add that important part! About 1/4 cup diced (more or less as desired though!) 🙂
