these easy jammy egg & cheese breakfast sandwiches come together in just minutes and are the perfect combination of sweet and salty for your morning meal!

Okay guys, bear with me if you feel like this is weird.

It actually took me a while myself to get on board with the eggs & jam thing, but once I did, I truly never went back.

When I asked on my Instagram stories whether you preferred sweet or salty in the morning, it was split about 50/50, so I decided why not share a recipe this week that’s the best of both worlds?!

I like to think of it almost like the trail mix of breakfast sandwiches. You’re getting a perfect blend of both sweet and savory flavors and they meld together so wonderfully.

I made these for myself only to have Owen gobbling up half my sandwich so I had to make another!

So if you were sitting here wondering if they’re kid-friendly, I can attest to the fact that even my picky 2 year old was happy with them, which to me these days, is the ultimate test of whether something is good!

Better yet, they take literally minutes to come together so they can easily be a fit for a busy weekday morning meal (or a great breakfast for dinner or even breakfast for lunch type of deal!).

Nothing better than a multi-purpose meal if you ask me!

Description

these easy jammy egg & cheese breakfast sandwiches come together in just minutes and are the perfect combination of sweet and salty for your morning meal!


Ingredients

Scale
  • 4 eggs
  • Splash of milk
  • Salt
  • 1/3 cup shredded cheddar cheese (more as desired)
  • 2–4 english muffins, split & toasted
  • Jam of your choosing
  • Pad of butter

Instructions

  1. Place a non-stick skillet over medium-low heat and add a pad of butter, swirling it around the pan as it melts to cover the surface
  2. Meanwhile, crack eggs into a small bowl and add splash of milk, whisk to combine.
  3. Add eggs to skillet once butter has melted and scramble (check out my video for the most fluffy scrambled eggs here)
  4. Remove cooked eggs from the heat and toss with shredded cheese and a pinch of salt, then set aside.
  5. Toast english muffins and spread both sides with jam.
  6. Layer cheesy scrambled eggs on top and sandwich together.

    I gotta say, I’ve been doing this since I was a kid. Reminded me of school breakfast with the toast and jam with scrambled eggs on the side but I used to throw everything together and loved it ever since!

      It totally reminded me of my childhood too, only I was never smart enough to throw it all together back then! So glad I finally did because it’s so good!
