these waffles bring all the flavor of your favorite apple cider doughnut straight to the waffle iron! made with less than 10 ingredients and done in 20 minutes, they’re a perfect way to celebrate the fall season!

Guys, these waffles are giving me LIFE right now.

They’re so full of apple cider doughnut flavor thanks to the addition of concentrated cider. Did you know if you throw some apple cider on the stove in a pot and cook it for a little bit it basically doubles its flavor?

It’s true! I basically can’t imagine going back now that I know this. I’ve been concentrating my cider and adding it to literally everything.

But aside from amazing apple cider doughnut flavor, these waffles are also providing fiber and a little protein! So you know that blood sugar spike you can get from a straight up apple cider doughnut? You’re not getting any of that here!

And the best part about these? They’re so incredibly fluffy. I think whole grains get a bad rep, but they can actually produce a really light and fluffy baked good!

And if these waffles aren’t proof of that, I don’t know what is!

You can serve these up with some yogurt and apple slices or, with just a little butter and syrup.

I personally like to keep them pure – just a little butter and some maple syrup does the trick for me. But I promise you however you serve them, they will be a hit to anyone and everyone you place them in front of (even if it’s just yourself!).

Description

these waffles bring all the flavor of your favorite apple cider doughnut straight to the waffle iron! made with less than 10 ingredients and done in 20 minutes, they’re a perfect way to celebrate the fall season!


Ingredients

Scale
  • 1 1/2 cups apple cider (*reduced to 1 cup – see note)
  • 1 1/4 cup white whole wheat flour (all-purpose works as well)
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon apple pie spice
  • 1 egg
  • 2 tablespoons canola oil

Instructions

  1. Place apple cider in a saucepan over low heat and allow to simmer, stirring occasionally, for 15-20 minutes or until it has reduced to 1 cup*
  2. Preheat waffle iron
  3. Combine flour, sugar, baking powder, salt, cinnamon, and apple pie spice in a medium mixing bowl.
  4. In a separate, smaller mixing bowl, whisk together egg, oil and cider.
  5. Add wet ingredients to dry ingredients and gently fold until just combined (with no remaining flour pockets).
  6. Place about 1/3 of the batter in each section of the waffle iron then cook.
  7. Remove and allow to cool on a wire rack for about 5 minutes, then enjoy!

Notes

  • Note that you don’t have to do this if you’re short on time.  It simply enhances the apple cider flavor.  If you choose to skip this step, use just 1 cup apple cider.
  • Favorite Tools (affiliate link): Cuisinart Waffle Iron
  • No waffle iron?  Just add a little milk or extra cider to thin the consistency and make into pancakes.  Or try this apple cider pancake recipe!
  • Storage: Waffles will keep in an airtight container for ~4 days in the fridge or 2 months in the freezer.
  • If you can’t find apple pie spice: Make your own by combining 1 1/2 tablespoons ground cinnamon, 1 1/2 teaspoons ground nutmeg and 1 teaspoon ground allspice

    I’ve never heard of an apple cider doughnut before but I have made your waffles twice now, once concentrating the vinegar, once not and I am sold! New fave.
