Just when you thought French toast couldn’t get any better, I went and folded creamy blackberry yogurt into the batter making for a slightly sweet/tart addition that will blow your mind!

I promise, after eating this French toast, you’ll never go back to the plain old, non-blackberry yogurt kind again 🙂

I’ve mentioned this before, but for some reason French toast tends to get a bad reputation as a breakfast option, but done right, it can actually be quite filling & nutritious.

Normally the major change that I make is to use a big loaf of day old whole wheat bakery bread which adds fiber to a dish that otherwise has very little.  But today I took it one step further and folded in some siggi’s 2% blackberry yogurt.  siggi’s simple ingredients give this French toast an additional protein boost without a ton of added sugar.

Start to finish this dish takes about 15 minutes to make and uses just 6 ingredients making it an easy breakfast or brunch to pull together while tasting as though you spent hours in the kitchen!

I recommend topping it with additional yogurt, fresh blackberries and a little drizzle of maple syrup, but it would also be great slathered with butter, nut butter or frankly, just eaten straight up!

No matter how you choose to serve it, I promise it will be an instant hit with everyone in the household (it definitely was in ours!).

Description

Ingredients

Scale

  • 6 slices of hearty whole grain bread (stale or day old is best)
  • 3 large eggs
  • ½ cup siggi’s 2% blackberry yogurt
  • 3–4 tablespoons milk (plain, unsweetened if using a non-dairy option)
  • ½ – 1 teaspoon ground cinnamon (depending on how much you like!)
  • ¾  teaspoon pure vanilla extract
  • Optional toppings: additional siggi’s 2% blackberry yogurt, maple syrup & fresh blackberries


Instructions

  1. Preheat a griddle of place a non-stick pan over medium or medium-low heat.
  2. In a large, shallow bowl (or plate with high edges), combine eggs, yogurt splash of milk, cinnamon and vanilla. Whisk together until fully combined.
  3. Grease the griddle or pan with a pad butter
  4. One at a time, dip both sides of the bread slice into the egg & yogurt mixture then transfer to the preheated griddle or pan.  Cook for 3-4 minutes each side or until just brown and crisp (cook times will vary so it’s best to just keep an eye out for the browning).
  5. Allow to cool 1-2 minutes before serving then top with toppings of choice and enjoy!

Notes

  • If using store-bought sandwich bread, you may have leftover batter.
  • French toast will keep in an airtight container for up to 4 days in the fridge and up to 2 months in the freezer.  To reheat from the fridge, toast in the toaster oven or microwave on HIGH for 40 seconds.  To reheat from the freezer, defrost in the microwave for 45-60 seconds then toast in the toaster oven or cook on HIGH in the microwave for 30 seconds.
