plump juicy raisins join tender apples & crunchy walnuts for a hearty morning dish that comes together in under 10 minutes!

This breakfast was born out of my grabbing random things out of the pantry one morning while looking for breakfast.

I have to say, I really should do that more often because that’s often how some of my favorite meals come about.

There are so many things to love about oatmeal for breakfast. Nutritional benefits aside (though there are many!), it offers a foundation for endless flavor possibilities – plus it’s so easy to pull together that it provides a breakfast option for even the busiest people!

This particular combination of oatmeal is one that I made over and over again for Owen when he was transitioning from purees to softer foods but never thought to make myself.


But boy am I glad that I finally realized I should whip it up for myself (and boy do I now understand why Owen devoured it every time I made it for him!) because it is GOOD.

With each bite you’re getting whole grains, fiber thanks to both the oats, chia seeds and fruit, heart healthy fats and protein thanks to the walnuts and chia seeds and delicious flavor! Not too shabby for a dish that cooks while the coffee brews πŸ™‚

Description

plump juicy raisins join tender apples & crunchy walnuts for a hearty morning dish that comes together in under 10 minutes!


Ingredients

Scale
  • 1/2 cup rolled or old fashioned oats
  • 2/3 – 1 cup milk or water
  • 1 tablespoon chia seeds
  • 1/2 – 1 teaspoon ground cinnamon or apple pie spice (more or less as desired)
  • 1/2 medium apple, diced
  • 1/4 cup raisins
  • 1–2 tablespoons brown sugar
  • 1/4 cup walnuts, roughly chopped

Instructions

  1. Combine oats, liquid of choice, chia seeds, cinnamon, apple and raisins in a saucepan over medium high heat.
  2. Stir frequently and once the majority of the liquid is absorbed (about 3 minutes), turn the heat to low stirring continuously until the oats get a somewhat gummy texture (about 3 additional minutes).Β  Apples should be warm & gently tender and raisins should be plump.
  3. Scoop contents out into a bowl and mix in brown sugar and walnuts.Β  Serve immediately.
