SPINACH AND FETA QUICHE

I’ve never made quiche before and it kind of blows my mind.

Had I know it was this easy and this delicious, I would’ve done it a long time ago.

The best part is that I can pull it out, heat it up and have an easy, healthy meal on hand for breakfast, lunch or dinner!

Given how busy I am – I’m always down for a meal that gets that much mileage out of it.

Especially when it’s as delicious as this one!

I also love the variety this option provides – there are SO many combinations you could do!  Including just choking it full of as many veggies as possible – in my book, that’s always a good thing

Spinach and Feta Quiche

Serves 8

Ingredients:

  • 9-inch pie crust
  • 5 eggs
  • 1 cup skim milk
  • 4 oz. feta cheese
  • Handful of reduced-fat part-skim mozzarella
  • 2 cups frozen, chopped spinach
  • Olive oil
  • Salt and pepper

Directions:

  • Preheat the oven to 375 F.
  • Cook spinach according to package instructions (I microwaved mine) then drain and allow it to cool.  Press down gently with paper towels to ring out any excess liquid that remains.
  • Combine eggs, milk and cheeses together and beat thoroughly.
  • Add salt and pepper to taste.
  • Press drained spinach into the bottom of the pie crust then pour egg, milk and cheese mixture over the top.
  • Drizzle olive oil over the top then place in the oven and bake for 40-45 minutes or until golden brown.

    I am all about the quick easy meals these days…and any meal that will give me some mileage! I don’t make quiche either and I don’t know why? I think I need to do that and I love that there are so many options when it comes add ins!

    Growing up, my mom’s ham and cheese quiche used to be my favorite meal. She would make two pies and the leftovers would be amazing, especially for breakfast. I haven’t made quiche in years, but it’s such a great recipe. Thanks for sharing!

    I went thru a severe quiche making phase where I wanted to make one everyday. Its crazy how easy they are to make, and you can get really creative and start throwing all sorts of ingredients in it! so fun

      I can attest that it actually WAS good as lunchtime leftovers! 🙂 And I agree – it’s a perfectly healthy meal…and can be made even healthier using half egg whites, less cheese and more veggies and still taste delicious!

    Definitely just pinned this and cannot wait to make it when we get home! I’ve actually been craving quiche [totally random but true] ever since I saw a recipe for a butternut quiche recipe… There’s something so comforting about it in the cooler months 🙂

    I succeed in doing a quiche! So happy about the result and TASTE! My boyfriend (and jealous co-workers) find it delicious! I’ll definitely do it again, maybe with other flavors, like ham.

    Woah! I’m really loving the template/theme of this blog. It’s simple, yet effective.

    Hey just wanted to give you a quick heads up and let you know
    a few of the images aren’t loading correctly. I’m not sure why but I think
    its a linking issue. I’ve tried it in two different browsers and both show the same results.

      I do it in the toaster oven or stove so the crust stays crispy. 15 minutes at 350 degrees F usually does it, but times might vary depending on your oven!
