this easy breakfast sandwich combines all of my favorite savory breakfast items in one single sandwich. loaded with protein, fiber and fat, it’s satisfying and delicious morning meal.

I used to eat eggs for breakfast every single day. But when I was in grad school and shopping on a strict budget, I started eating eggs for lunch and dinner because they were affordable, easy and versatile!

I love that you can get super creative with eggs and spin them into a million different meals, but for this sandwich, I stuck with the basics. I combined all my favorite savory breakfast items and let me tell you, they make a really good (flavorful!) team.

You’re getting heart-healthy fat, protein and fiber all in one handheld sandwich which means you can easily pack this up to go (something I always appreciate about a meal!)

You can mix and match this up in whatever way works best for you. Are you a huge fan of bacon? It would go great in here. Not a regular hummus fan, use your favorite flavor (almost all of them would work well here!). Not into eggs, you can omit them and still get protein from the hummus.

Gluten-free? Sub your favorite GF bread here and enjoy! Dairy-Free? Omit the cheese from the recipe.

Description

this easy breakfast sandwich combines all of my favorite savory breakfast items in one single sandwich. loaded with protein, fiber and fat, it’s satisfying and delicious morning meal.


Ingredients

Scale
  • 2 slices hearty whole grain bread (I love Trader Joe’s Whole Wheat Tuscan Pane)
  • 2–3 tablespoons hummus
  • 1/4 – 1/2 avocado, sliced
  • 1–2 eggs
  • Splash of milk
  • Salt & pepper
  • 1/4 cup cheddar cheese, shredded
  • Everything bagel seasoning
  • 2–3 slices tomato
  • Leafy green lettuce or spinach
  • Pad of butter

Instructions

  1. Toast the bread, top with hummus, lettuce, avocado and tomato, then set aside.
  2. Meanwhile, heat a non-stick skillet over medium-low heat and add butter.Β  Crack egg(s) into a bowl and pour a small splash of milk in.Β  Whisk until combined.
  3. Once butter has melted, add egg & milk mixture to the pan, scrambling until eggs are fully cooked.
  4. Remove from heat, toss in cheese and mix to combine and melt cheese.Β  Top with salt & pepper as desired.
  5. Add cheesy eggs to one side, sprinkle with everything bagel seasoning and sandwich together.

Notes
