these delicious whole grain waffles are hearty while remaining light & fluffy in texture with the most beautiful hint of citrusy sweetness from the addition of Florida Orange Juice.  a perfect way to celebrate dad!

If my husband were a drink, he would hands-down, no question about it, be OJ.  I don’t think I’ve actually met anyone else in my life that loves it as much as he does.  Honestly, if he could live off it, he probably would.

So when I was thinking about what special breakfast Owen and I could make him for Father’s Day, I decided to combine his love of Florida OJ with his favorite breakfast option – Belgian waffles!

These whole grain waffles are somehow both hearty and filling while also being light and fluffy – the best of both worlds if you ask me (and my husband!).  And even better, you get the best hint of citrusy sweetness from the addition of delicious Florida Orange Juice. 

Needless to say, these babies were a major hit with my husband (Owen and I of course had to taste test a few for quality control and can also attest to how delicious they were!).

Not to mention that in every glass, Florida Orange Juice provides what they call “the Amazing 5” – Taste, Vitamin C, Folate, Potassium and No Added Sugar.  Plus, an 8 oz. glass of 100% orange juice counts as a daily recommended serving of fruit!  So with each bite you’re getting flavor, fiber, vitamin C, folate and potassium, which is amazing for a recipe that uses only 8 ingredients and takes just 15 minutes to pull together!

Description

these delicious whole grain waffles are hearty while remaining light & fluffy in texture with the most beautiful hint of citrusy sweetness from the addition of Florida Orange Juice.  a perfect way to celebrate dad!


Ingredients

Scale
  • 1 cup Florida Orange Juice
  • 2 cups white whole wheat flour
  • 2 tablespoons baking powder
  • 2 tablespoons granulated sugar
  • ½ teaspoon salt
  • 2 large eggs
  • 4 tablespoons canola oil
  • ½ cup milk
  • Optional toppings: fresh fruit, yogurt, maple syrup, dusting of powdered sugar

Instructions

  1. Preheat a waffle iron
  2. Combine flour, baking powder, sugar and salt in a large mixing bowl, whisk to combine and set aside
  3. In a separate mixing bowl, add eggs, oil, milk and 100% orange juice whisking until well combined
  4. Add wet ingredients to dry ingredients and use a rubber spatula to gently fold until no flour pockets remain
  5. Add ¼ – 1/3 cup of batter to each waffle iron square (or 1 cup total if using a round iron) and cook
  6. Remove from waffle iron, allow to cool 2 minutes then top with toppings of choice and enjoy!

Notes

  • For even more orange flavor, feel free to whisk in 1 teaspoon orange zest with the dry ingredients.
  • Waffles will keep in an airtight container in the fridge for up to 3 days and in the freezer for up to 2 months
