5 quick and easy, balanced dinner ideas to get you (or your whole family!) through the work week!

Most of you are probably just getting back from your holiday weekend celebrations, so I’m taking the work out of planning your work week dinners! 5 more easy dinners for ya to make this week (catch up on previous plans here).

MONDAY: Baked lentil “meatballs”

Vegetarian meatballs so hearty and delicious that even my meat-loving husband and picky toddler approved!  Perfect for #meatlessmonday!

  • Serves: 4-6
  • Done in: 20 minutes
  • Tips: Serve over whole wheat pasta or a mixture of veggie noodles and pasta. Top with marinara and freshly shredded parmesan cheese. If serving to a toddler, serve with cooked carrots and pasta.

TUESDAY: Easy chicken sausage & mixed veggie sheet pan dinner

This quick & easy dinner is mostly hands off and a great meal for summertime. Roast it in the oven or fire up the grill and throw everything on!

  • Serves: 4-6
  • Done in: 30 minutes
  • Tips: Serve with roasted potatoes, a whole grain like brown rice or grilled bread.

WEDNESDAY: Small-batch black bean, corn & spicy sweet potato enchiladas

These simple enchiladas use a store-bought sauce and pantry staples for an easy weeknight meal.

  • Serves: 2-4
  • Done in: 40 minutes
  • Tips: Serve with avocado, freshly chopped cilantro, hot sauce, plain yogurt, corn chips or salsa. If you want, throw some shredded chicken into the mix before rolling!

THURSDAY: Broccoli & spinach pesto tortellini bake

This easy meatless bake comes together quickly, is full of flavor and packed with veggies. it’s also a great make-ahead meal for busy weeknights!

  • Serves: 6
  • Done in: 20 minutes
  • Tips: Serve as is or with a side salad to round out the meal with a little more fiber.

This perfect summer dinner is light, refreshing, loaded with flavor and it’s vegan!

  • Serves: 2-4
  • Done in: 45 minutes
  • Tips: Serve with avocado, freshly chopped cilantro, hot sauce, plain yogurt, corn chips or salsa. If you want, throw some shredded chicken into the mix before rolling! Heck, it’s Friday and you don’t have to be at work tomorrow so go ahead and serve it with a margarita if you want!
