I recently had a bowl of oatmeal at a local coffee shop one morning when I was running late. I figured it would do in a pinch.
Little did I know that bowl of oatmeal was going to become a new breakfast obsession of mine! Upon first bite I immediately started dreaming about how I had to recreate it at home – which I have done at least once a week since that very first bowl.
It’s so ridiculously simple but so incredibly delicious. It just goes to show (as I always say!) sometimes simple is just the best.
This bowl of oats comes together in under 5 minutes and is packed with filling fiber from the oats, a hint of sweetness from the cranberries and crunch from the walnuts. Definitely worth adding to your morning routine!

Ingredients
- 1/2 cup old fashioned rolled oats
- 1 tablespoon chia seeds
- 2/3 cup water or milk (more or less as needed for oats to be submerged)
- 1 tablespoon brown sugar (more or less for desired sweetness)
- 1/4 cup juice-sweetened dried cranberries
- 1–2 tablespoons walnuts
Instructions
- In a saucepan, combine oats, chia seeds, cranberries and liquid of choice (enough for oats and cranberries to be submerged)
- Place over medium low heat and stir frequently until oats begin to cook (they will look full and gelatinous) and cranberries soften and plump – about 5-7 minutes.
- Once oats are cooked, turn off heat & stir in brown sugar and walnuts, then serve!
