Between St. Patrick’s Day, the coming of Spring and things finally starting to bloom again after a long winter, green is THE color of March for me – which makes this refreshing super green yogurt smoothie bowl a perfect breakfast!

Not only is this smoothie bowl easy & delicious, it’s also loaded heart-healthy fat, vitamins, minerals and protein!  And that’s just the base – if you choose from any of the optional add-ins listed, you’re packing in even more nutrition per bite!

But what really wins me over with this smoothie bowl is the FLAVOR.  It’s not the typical overly sweet taste you can sometimes experience from a smoothie you buy at a store.  It’s lightly sweetened with just banana and some siggi’s 2% coconut yogurt.  And let me tell you, if you’ve never tried the blend of banana and coconut, you need to get on that train, because it’s incredible!

I love the addition of the siggi’s 2% coconut yogurt because it not only adds a nice boost of protein (which gives this smoothie bowl some staying power!) but it’s also not so overly sweet that you lose the taste of the other flavors in the bowl.  siggi’s simple ingredients and lower sugar make it the perfect add-in!

This smoothie bowl is also SO thick and creamy thanks to the yogurt, the avocado and the frozen banana.  It’s almost like ice cream in texture (which is great because you can easily scoop it & your desired toppings right up with a spoon!).

There’s pretty much nothing I don’t love about this smoothie bowl (if you couldn’t tell) and I hope you feel the same way!  Owen is already on board with it, so I can tell It’s going to be in heavy rotation in our household as a refreshing springtime breakfast or snack 🙂

Description

this easy smoothie bowl is packed with a few special ingredients that not only bump up its nutrition but make it thick, creamy & oh-so delicious!


Ingredients

Scale
  • 1 ripe banana that has been peeled, frozen (for at least one hour, but ideally overnight) and broken into chunks
  • ½ ripe avocado
  • 2 – 4 large handfuls fresh baby spinach (depending on what will fit in your blender! the more you add, the more vibrant green this smoothie bowl will be!)
  • 1 container siggi’s 2% coconut yogurt
  • ½ – 1 cup plain, unsweetened soy or almond milk
  • Optional add-ins: 1 tablespoon chia seeds, flaxseeds, nut butter or ¼ cup granola
  • Topping ideas: fresh berries, unsweetened flaked coconut, granola, nut butter

Instructions

  • Combine banana, avocado, spinach & yogurt (as well as desired add-ins) into a blender or food processor and begin to blend.
  • Stream in milk until you’ve reached your desired consistency.
  • Continue to blend until smooth and creamy.
  • Pour into a bowl, top with toppings of choice and enjoy!

Notes

This can easily be made into a drinkable smoothie, just add more milk for a thinner texture that can move through a straw
