For those of you that have read the blog for years and that follow me on Instagram, it’s no secret that Mexican cuisine is one of my most favorites.
I think this particular cuisine often gets a bad rep but it can actually be a really healthy and well-balanced option! I like to use lean protein sources like beans, chicken and fish, tons of vegetables like corn, pico de gallo and peppers, whole grains such as brown rice and corn or whole wheat tortillas, plain non-fat greek yogurt in place of sour cream and reduced fat cheese in place of full fat. I top off most of my dishes with some avocado which adds some healthy fat and hot sauce which adds flavor and heat!
