Oh hello bowl filled with deliciousness!
This easy skillet gnocchi uses just one pan and comes together in about 15 minutes which, with temperatures in the 90s here in charlotte is just about all I can ask for out of a meal!
It combines crispy on the outside, soft on the inside gnocchi (thanks to being cooked in the skillet!) with gently sautéed cherry tomatoes and zucchini and is then finished off with creamy fresh mozzarella cheese, a drizzle of olive oil and balsamic glaze, a sprinkling of salt & pepper and chopped fresh basil.
It’s got all the wonderful flavors of a good caprese salad with the lovely surprise of gnocchi added in! It works well as a both a main meal and a side dish – you could even throw some chickpeas into the mix to give it a little more protein if eating it as a meal.
Regardless of how you serve it, it’s easy, delicious and requires minimal cleanup which is A-OK in my book!

Ingredients
- 1 12 oz. package skillet gnocchi (I used Rana)
- 1 medium zucchini, washed and quartered
- 1/2 pint cherry tomatoes, halved
- 1/2 – 2/3 cup fresh mozzarella balls, halved
- Olive oil (or butter)
- Balsamic glaze
- Salt & pepper to taste
- Fresh basil, chopped
Instructions
- Cook gnocchi according to package instructions
- Once gnocchi is cooked, remove and set aside. Add a drizzle of olive oil to the same pan (no need to wipe it out!) followed by zucchini and tomatoes. Sprinkle with salt & pepper and sauté over medium heat, stirring frequently, until just tender (about 4-5 minutes)
- Add gnocchi back into the pan, give it one last toss over the heat (for about 30 seconds) then pour everything into a large serving bowl, top with fresh mozzarella, more salt & pepper as desired, a drizzle of olive oil and balsamic glaze and fresh chopped basil
