There’s honestly just something so fun to me about creating rainbow food. It instantly puts me in a better mood and makes me feel so happy. I’ve been loving pulling a few of these together over the weekend, sealing them up and having them on hand for snacks throughout the week.
The absolute best part about this is I feel like I could literally make it all spring and summer long and hardly ever repeat the same mix! The sky is pretty much the limit in terms of the mix you choose because who doesn’t love a big jumble of refreshing fruit?? I can’t think of much that wouldn’t go well together.
To make it more of a meal, you can also layer in yogurt and/or nuts and granola! If you’re putting these together with kids, the yogurt can be the “cloud” and the granola or nuts can be the gold at the end of the rainbow! It’s honestly so fun to get creative and create a story around food with kids. It makes them so much more engaged in the process!
There’s really no recipe, you can make this yours in any way just by choosing one or more red, orange, yellow, green, blue and purple fruits to layer on top of one another! Below are some ideas to get the wheels turning. Happy Monday everyone!
