this easy hummus toast is as delicious as it is beautiful combing flavorful boar’s head everything bagel hummus with roasted sweet potato hash and a creamy sunny side up egg.  perfect for special occasions or a delicious meal any time!

Okay I’m going to say something bold here….but I really think that hummus toast is the new avocado toast. Hear me out! Before you roll your eyes and count me out as crazy, you at least need to try it!

Especially this particular hummus toast. This could work for breakfast, brunch, lunch or even dinner! It’s loaded with so much flavor and is so incredibly filling that it’s really pretty hard to beat.

Don’t get me wrong, I’m not saying avocado toast is bad by any stretch of the imagination – but you’re bound to grow weary of it at some point and when you do, this hummus toast will be here and waiting for you!

It just so happens to make for a perfect, delicious & easy mother’s day breakfast (or brunch) so if you’re still looking to plan your menu, I highly recommend this!

And don’t worry, if you’re not an everything bagel fan, Boar’s Head has TONS of delicious hummus flavors (including chocolate!) so feel free to mix it up however you see fit. Same goes for the egg – no need to make it sunny side up if you prefer scrambled or hard boiled – anything goes!

Description

this easy hummus toast is as delicious as it is beautiful combing flavorful boar’s head everything bagel hummus with roasted sweet potato hash and a creamy sunny side up egg.  perfect for special occasions or a delicious meal any time!


Ingredients

Scale

For the Hash:

  • 1 medium sweet potato, peeled and cubed
  • 1/2 red onion, diced
  • 1–2 roasted red peppers, diced
  • Olive oil
  • Salt & pepper to taste

For the Toast:

  • 2 slices hearty whole wheat bread, toasted
  • 4–6 tablespoons Boar’s Head everything bagel hummus, divided
  • 2 eggs, cooked sunny side up (or to your liking)
  • Salt & pepper to taste
  • Olive oil
  • Freshly chopped herbs (such as parsley, oregano or basil)

Instructions

For the Hash:

  1. Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper and drizzle with 1/2 – 1 teaspoon olive oil.
  2. Layer cubed sweet potato, onion and roasted red peppers onto the prepared parchment paper, drizzle with 1/2 – 1 more teaspoon olive oil, sprinkle with a little salt & pepper and roast for 25-30 minutes or until everything begins to crisp and sweet potato is fork tender (note that you may need to pull out the onions before the sweet potatoes are ready)
  3. Remove and set aside

For the Toast:

  1. Toast the two slices of whole wheat bread then spread each with hummus 2-3 tablespoons hummus
  2. Place 1/3 cup (or more!) hash on top of the hummus then finish off with a sunny side up egg
  3. Sprinkle with additional salt & pepper as desired then finish with some freshly chopped herbs
