If you follow me on Instagram, then you’ve definitely seen these bars making a major appearance!  Owen and I have been gobbling them up like there’s no tomorrow.

I love these because they’re a great way to sneak in a ton of nutrition into one bite-sized bar that I can quickly pull out for easy breakfasts or snacks. 

They’re offering up whole grain fiber &  heart-healthy fats from the oats and chia seeds plus a boost of protein thanks to the addition siggi’s seasonal (aka – here for only a limited time!) 2% pumpkin & spice yogurt.  Not to mention numerous vitamins & minerals from the bananas & pumpkin!

All around, not too bad for a dish that comes together in less than 30 minutes, am I right?  PLUS (as if you needed more convincing on these babies!) with the addition of siggi’s and the bananas, you’re getting a breakfast that’s already lightly sweetened with those two simple ingredients, so there’s no need to add a load of additional sugar.

I personally like to slather mine with a little nut butter or a little additional sigg’s pumpkin & spice yogurt, but you can serve them straight out of the pan as well (that’s Owen’s favorite way!).

No matter how you choose to serve them up, I can promise you they’ll be full of pumpkin flavor and an easy, nutrient-dense treat for the whole family!

Description

these nutrient-dense bars are loaded with fall flavor!  kid & adult-friendly, they come together in just about 30 minutes and make the best easy breakfast or snack for fall.


Ingredients

Scale
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 2 tablespoons chia seeds
  • 1 teaspoon pumpkin pie spice
  • ½ – 1 teaspoons ground cinnamon (more or less to your liking)
  • 1/4 teaspoon salt
  • 3 tablespoons maple syrup
  • 1/2 cup of milk (any kind you like), plus more as needed for desired consistency
  • 1/3 cup siggi’s pumpkin spice yogurt (you will just need one 5.3 oz. cup for this recipe)
  • 1/3 cup pumpkin puree
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 very ripe bananas, mashed

Instructions

  1. Move oven rack to the middle of the oven then preheat to 375 degrees F.  Spray an 8×8 pan with cooking spray.
  2. In a large mixing bowl, combine oats, baking powder, chia seeds, pumpkin pie spice, cinnamon and salt.  Whisk and set aside.
  3. In a smaller mixing bowl, add maple syrup, yogurt, pumpkin puree, egg, vanilla, mashed bananas and half the milk.  Whisk together to combine.
  4. Add wet ingredients to dry ingredients, adding more milk as needed if mixture seems dry.
  5. Pour batter into prepared baking pan and bake for 30-40 minutes or until a knife or cake tester inserted in the middle comes out clean.
  6. Allow to fully cool on a wire rack before slicing and serving.

Notes

  • Bars can be stored for up to 4 days in an airtight container in the fridge and up to 2 months in the freezer.

    These look absolutely delicious. I love baked oatmeal because it can be breakfast, snack or dessert. And, I am a huge Siggi’s yogurt fan. Thanks for another great recipe!
